What do you mean? Do you mean short answers instead of multiple choice? If yes, you can start with the multiple choice and then manually add short answer questions.

Not that I'm aware of. Forms integrate well with O365, but it's quite limited in comparison to Google Forms in terms of the ability to install add-ons.
