INGREDIENTS
-800g chicken liver (marinated in 1Tbsp soy sauce and 1Tbsp oyster sauce and ground black pepper for about 10min)
-2pcs chopped onions
-8cloves chopped garlic
-700g chicken gizzard
-1/2tsp salt and ground black pepper
-3Tbsp soy sauce
-4Tbsp oyster sauce
-water enough to submerge the gizzard (add more as needed)
-2pcs dried bay leaves
-1/2tsp whole peppercorn
-4Tbsp vinegar
-a bit of cooking oil for pan frying

I already know this dish would be awesomely delicious because I've made this in the past but a much simpler one. Your recipe is a much improved version.
I like it as filling for pan de sal. Or I would coarsely chop half of it into liver pate top with grated hard boiled egg .

Naku maraming salamat po.. 😉😊 Pareho lng po ang ginagawa kong pag hugas sa chicken meat at liver and gizzard.. Running water then strain ng mga 2x.. Then make sure to wash Hands often to avoid cross contamination.. 😉😊

I watched a few videos and surprised soya sauce and oyster sauce are quite heavily used in those videos. While soya sauce has been around for a long time, Oyster sauce became more well known before 1900, so unless Philippines also actually had their own Oyster sauce, I am quite surprised that Oyster sauce playing a big role in Philippines cooking. The food looks good and tasty and they should go really well with rice.

It tastes good even without oyster sauce
Oyster sauce is NOT part of traditional Filipino cooking actually. But in these recipes from my favorite chef ❤ it works perfectly with his style of cooking (saute, sangkutsa, reducing, caramelizing.) Also oyster sauce already has what is needed for most Filipino dishes - salt, sugar, thickener, caramel, umami flavors.

Depende po eh.. Sakin po kc mas gusto ko po sa gizzard ung malambot tlaga kaysa dun sa malambot na chewy.. Depende po talaga sa preference ng nagluluto at kakain.. Pwede nyo po itry muna ung 10min the tikman kung okay po sa inyo.. Kung matigas p po sa panlasa nyo, pwede nyo po ituloy ung pagpapakulo hanggang lumambot po ayon sa preference nyo.. 😉😊
