    Hello friends! There have been a lot of questions about why Socks had to leave the house, and that is because he does not belong to us. 😂 Our pet dog Speedy doesn't do well with other animals, he is pretty scared of them, so we do not have multiple pets at the moment. I hope that clears up some of the confusion.

      Thanks for clearing that up! I'm a crazy cat lady, so I love any cat I see. However, you have to make sure your pet is comfortable, and I would do the same. :)

    For the black bean tacos try replacing the mayo with sour cream and adding some chopped quick pickled red onions to give it a more authentic flavor.

      @@cleanfreak2005 cats don’t care. Trust me. I have 8 cats. We have a sunroom with no AC. I have cats that lay out there almost all day and we live in Memphis area. It is hot all summer here usually. I thought maybe she didn’t want him on counters while she was working. Mine won’t leave me alone.

    For mashing your hard boiled eggs, the meat masher many people use when frying up ground meats works great!

    A TIP ...Since you were using the last of your mayo...add all ingredients to the jar and shake...shake...shake! Less dishes to do, and the jar is just right for the slight chance that are any leftovers! Love your channel!

    A toasted bread, HELLMANS MAYO, and tomato is perfection... 3 different kinds of tomatoes sliced thinly even better! 😋 I am the only tomatoes eater in my house...I may or may not have 14 different tomato plants growing!

      I could eat a tomato, fresh mozzarella, and mayo sandwich everyday in the summer. Sometimes just plain, sometimes with basil, or bacon, or pesto. So, so good!

    Soak the raw onions in cold water for about 10 minutes before using them, takes some of that "raw onion bite" out of it! Little trick my mom taught me, total game changer!

    I made the citrus seafood salad last night - from Maine so great fresh crabmeat - I'm calling this Pseudo Cerviche. The pita chips were a nice addition. I'm going to make another batch (minus the salad part) to bring to a party as an appetizer with the pita chips. Definitely a keeper.

    For the first salad I would recommend pickled red onions chopped up! Pickling them gets rid of any onion bite and just leaves you with tangy and sweet crunchiness :)

      I'm in Arizona too and my electricity bills have been enormous. I only cook once a week and eat cold foods and leftovers for the rest of the week. I can't wait for winter. 😩

    My favorite summer meal is caprese salad. It’s just sliced tomato, fresh mozzarella sliced, and fresh basil. I salt the tomatoes. Some people drizzle it with olive oil. So good and refreshing.

    I good cheap cold and meatless meal I’ve made it smashed chickpea salad sandwich. 1 can of chickpeas drained smashed with a potato masher or just a fork, dill pickles chopped, red onion, mayo, Dijon mustard, salt pepper and dill.

      I take a little less corn as beans and throw the kernels in a dry pan and roast them until they look good and roasted, meaning blackened in tiny spots! Then I let the corn cool in the fridge. Later that night I toss them in with the beans mixture which I put together while 'roasting' the corn kernels! Delicious!

    Put your lemons and limes in the microwave for about 10 seconds after you zest them-you won't believe how much extra juice comes out of the squeeze thing. Also- if they aren't already cut in half, make a slit so they don't blow up.

    Try canned black beans, canned or frozen corn, drained Rotel style tomatoes (keep the juice to add back in if it's too dry--I also love to drink it), diced onion, cilantro and a hint of cumin and salt. Mix well, use tortilla chips to scoop. For a church lunch, I add in cold cooked rice for a really fancy schmancy salad. Good video.

    Many moons ago, my Italian grandparents taught us to always salt the tomatoes, it brings out the flavor. On sandwiches and such I have them as the last ingredient and salt them. In cold salads I put then all together, then sprinkle a bit of salt, then mix. Delicioso.

    We have both whip and mayo. Same here one grew up with one and not the other. I can’t eat potato salad or deviled eggs without miracle whip but like mayo for nearly everything else.

    Tacos: Push the end up vertically with your index finger and pinch the sides together over it and you'll avoid most of the spillage if your filling isn't soupy.

    My husband and I loved the Hummus tomato sandwiches. We had sour dough bread and toasted it for the sandwich. We also made our own hummus. What a yummy filling sandwich for a hot summer day! Maybe all her recipes aren’t “frugal” I want to thank her for her recipes. It’s nice to find something new to make. Thank you “Frugal Fit Mom”!

    Omg I am dying! I am French and I do tell you that I find croissants on clearance SO MUCH and besides ham croissants, I never know what to do with them. I laughed so hard at the Pink Panther section of the video because my phonetics teacher played it once in lecture hall (I majored English in college). You made me laugh too when you said holy smokes for smoked salmon. I think I am going to try these recipes ;)

    Perfect timing as the temperatures are expected to rise on the east coast. Top that seafood salad with some avocado oh ya!     I'd love to see a video of recipes to use a bunch of garden vegetables. We are to the point of the summer where we have tomatoes, zucchinis and banana peppers coming out of our eyeballs!

      If you sauté some zucchini and squash in a frying pan with oil, salt and pepper, and when they are done crack in some eggs into the pan, it’s a really fast and easy meal any time of the day. My Italian grandma used to add in a big handful of Parmesan cheese to it and serve.

      The tomatoes and peppers could be made into a salsa. Three in some onion, salt and pepper, lime juice and cilantro (if you like it- I do not). My Mexican friends whip up salsa in a blender after coarsely chopping the veggies. You can freeze left overs and use throughout the year if you have too much.

    YES!! I finally feel justified using my pastry blender for egg salad! I've been doing it for a while and find it much better than a potato masher. Summer has been brutal here as well.. humid, and hot and just miserable in general.

      It's so great! I do 250 degrees for 15 - 20 minutes and then given them a quick rinse in cold water. So easy and good.

      I steam my eggs using the IKEA $6.99 collapsible steamer insert in a small sauce pan. It takes 9 minutes & you've a hard boiled eggs without green oxidation on the yolk. 😂

    Good ideas. Btw, I use a potato masher to make egg salad. I like a version of salad nicoise. Italian canned tuna, oil drained off, chopped red onion, capers, green beans, blk olives, wedged tomatoes and hard boiled eggs. Dressing is olive oil, red wine vinegar, teasp Dijon mustard, oregano. We also substitute leftover roasted chicken if available.

    Yup any salad , sandwich & wrap for very hot days n lazy mood swing..Just airfry my buttered hot dog bun drizzled with leftover bolognese sauce & 2 cheeses . For pizza aroma sprinkle minced garlic mix olive oil on the top. Perfecto

    I am so late to this but have a few ideas picked up from a recent trip to California. There were so many toasts and bagel situations. A really good one was the California bagel: toasted bagel, avocado, provolone, turkey, and tomato. They also did a smoked salmon toast with the smoked salmon, capers, dill, cream cheese on a toast. Those were my two favorites. :) Yogurt jars were popular too.

    Hi, I use my potato masher to crush hard boiled eggs. These are great! Call it smoked salon salad. Sounds luxurious!

    The secret to keep the taco ingredients inside is to just fold a small edge up and then fold in the middle like regular! It gives you a rim on one end that prevents the stuff from falling out! Works like a charm! It gives you like a rim! So simple! I hope I explained it so that it makes sense!

    I learned a trick when juicing lemons and limes. If u slice off the tip and juice it, it literally gets ALL of the juice out! GAME CHANGER. No wasted food lol

    Some other cold summer dishes are: Vinegar & oil marinated Green bean w/onion salad; taco salad (we make several pounds of taco meat at once and freeze them in batches for later); BLT sandwiches; Club sandwiches; Seafood salad (we use cooked salad shrimp, imitation crab, celery, green onion, curry power, lemon juice, salt & pepper, mixed with 1/2 mayo & 1/2 sour cream; Egg salad & ham on toasted rye.

    For the boiled eggs if you want very small pieces for a egg salad just use a cheese grater. Nicely smooth salad without to much work.

    A great way to stretch summer salads is to boil up a bunch of pasta (maybe late at night, when it's cooler), toss it with some oil, and keep it in the fridge to add it to salads throughout the week. Edamame is also a lovely addition to pasta salads, but they do need to be boiled.

      My sister would always make enough pasta to freeze an extra meal’s worth for her family of six. It froze beautifully for her and saved that time when she was in a hurry! It would work great for quick salads!!

      My family is in Texas and New Mexico and it’s hot there too. Breaking records as well. But they all forget that most of us up here in the northwest don’t have air conditioning and it’s humid near the coast. Our houses are designed for a cold damp climate to hold heat in and keep cold and damp out not to allow cool air flow to circulate like in the tropics or the southwest. It feels like steaming to death slowly inside a bowl of hot soup.

    Try quartering your oranges so they fit in your squeeze-y thing. I have done this successfully with large lemons too!

    I've found the best way to chop eggs for egg salad is to use a potato masher. Mine has large square holes and is so quick.

    Sometimes I grate my eggs for egg salad, as with the cheese grater. Quick and efficient.

    I grew up with Miracle whip but switched to mayo & can’t even eat anything with Miracle whip in it anyway, it’s just so sweet

    I like toasting my bread under the broiler and only on one side. That way I get that toasted crunch on the side that hits the fillings and my mouth is saved from getting cut up when I bite down 🤤

    These look great! Our go to is BLT’s. I’ll either cook a bunch of bacon in advance, or buy the precooked stuff. We also do a lot of sub sandwiches with whatever deli meats we have on hand. Summer means simple, light meals.

    If you soak your chopped onions in water for 5 minutes before needing them, it really helps with the onion bite! I love it so things I won’t be cooking like salads and sandwiches
    Yummy onion flavor without the “omg!” 😂
    My boyfriend loves onions so I don’t do it for his

    I remember when I was little my friend's mom made us sandwiches with Miracle Whip which we never had before. Thankfully she left us by ourselves afterwards...we hated the Miracle Whip so much we started cry-laughing hysterically while trying to eat the sandwiches. We ended up hiding the uneaten parts in the trash can under other things. I felt SO guilty about wasting food but I still cringe/laugh every time I see Miracle Whip

    Try Everything bagel seasoning on top of the avocado on the humus sandwich! It adds to the yumminess!

    The easiest way to cut up eggs for any type of salad is to just squish them in your hand lol. My grandma always does that for potato salad so I started doing it myself and it makes quick work of each egg.

    Crockpot meals overnight and overnight oven cooking works for pork or beef roasts to be shredded and eaten in tortilla wraps with sliced colored peppers, thin red onions and either a thin schmear of sour cream or even ranch salad dressing! Sliced avocado goes great in them too. I call the beef ones carnitas but I’m not sure that’s the right term.

    No Mayo in our house, we both like mustard in our tuna salad. We are not fans of “meat salads”. Try hummus on thin rice cakes (at $1 store 😉) add clover sprouts! Bam 💥 that’s good and fresh. Thanks for sharing.

    I have a summer time recipe that is no cook......I call it bruschetta. Sooooo goood! Chopped garden tomatoes, chopped basil, cracked black pepper, feta cheese, shredded onion (any you like), and I use Good Seasons Italian Dressing (or the Aldi knockoff), and put it on toasted italian bread! My absolute favorite when the tomatoes start coming in! I have also added a little balsamic glaze if I have it on hand

    Hi, resident Taco Expert here straight from San Antonio, Texas. You can either put a tortilla under your plate like you said or you can scoop it up with a chip or a fork or spoon. I typically just squish the filling that fell out with the last few bites of my taco. Also, the only acceptable way to flip tortillas are with your hands.

    We're in a heat wave and being told not to use the stove/oven from 12-8pm this week (and we're expected to have even higher temperatures next week). Definitely putting some of these ingredients on next week's shopping list!

    I’m going to use these recipes! I will salt and pepper my tomato slices and I will lemon and salt my avocado slices! But that’s the only thing I will change.

    Mmmmm the salmon salad looks amazing! I grew up in a Miracle Whip household, then discovered 'real mayo' in my 20s and now Miracle Whip seems gross to me.
