Se ve delicioso, sin dudas lo haré esta semana. Una vez hice una salsa muy similar, con el corte llamado ASADO DE TIRA en Uruguay, que es esa misma carne que usaste pero se corta trasversalmente cortando los huesos y dejando varios trozitos pequeños de hueso por trozo de carne (dato de color sin importancia). Conocí la receta por un chef de aquí, llamado Hugo Soca, el cual te recomiendo chequear, ya que su cocina y la tuya son muy compatibles, y creo que te podría inspirar para alguna receta. Abrazo!
