I really enjoy your videos. I have a whole chicken in the refrigerator. I'm going to try the marinade and grill it. I forget the term... I remove the back, breast bone, and wing tips. Then I flatten it out. It makes it grill evenly. The parts I remove get saved in the freezer for future stock, even any extra fat or skin.. If there's organ meat, it gets boiled for the neighborhood cats. It just so happens that I pulled some fresh ginger from my California garden last week. That's why I liked your recipe. It's my first year growing it,. When I saw that it had died back from a few nights of light frost, I pulled it. To my surprise, it looked beautiful. It's about half the size of store ginger, but it's perfectly edible. I don't have freezer recipes. That's why I watched. This year, I was better about freezing garden produce for Winter use. I put up onions, celery, and peppers. I'm just about out, so that was a success. I'm just learning how to make omelettes. Having the veg in the freezer makes it easier to make a hot breakfast as delicious as going out. (Current prices have changed our habits). I've also begun portioning meat before freezing, to save money. I usually cook just enough for dinner and a smaller portion for lunch the next day. This time of year a pot roast is good. I have a small crock pot. It will hold 1 1/2 lb of meat, a few potatoes, and the carrots. So, if I get a roast, I cut it into smaller chunks. I use one and freeze the rest. I like to use crock pots on the days I'm busy in the afternoon. The other day I made a sweet n sour pork in the small crock. I sliced a lb of tenderloin into chops. I added a few garden sweet potatoes. They were peeled and put into big chunks. Then I added a few pieces of leftover pineapple. It wasn't enough, so I also added candied/dried pineapple. I took a nub of fresh ginger and chopped it fine. Half a chopped onion. Salt, pepper, nutmeg, worcheshire sauce, mustard, and brown sugar... and maybe a half cup of water so it wouldn't be too dry and burn. Orange juice or stock would be fine too

3 fabulous dinners. Great! At the age of 71 I tried to make Mac and cheese for the first time the other night. I had a terrible recipe and it came out terrible! Your recipe is so much better and I'm looking forward to making it this weekend along with the meatloaf. Thank you, Kevin!
I got into freezing meals when I was pregnant with my second son. At the time microwaves were not around so I had a food sealer and I could cook the sealed food in boiling water to reheat. I even made a Christmas Eve dinner and froze everything (baby #2 came right before Thanksgiving). Now I make big batches of a hearty chicken broth and I use that as a base for many types of soup-from tomato to broccoli to leek soup and garlic soup. I’m writing a cookbook for soft food foodies with soups, soufflés and smoothies. I think I freeze most of what i make. Scones. Bread, sauces, and more. You were so right when you said when you don’t feel like cooking, having a meal in the freezer is so nice. I also love the way you pronounced Gouda. That’s what I call it after going to the Netherlands and seeing them make the cheese. And they told us the proper way to say it. Delish!

One thing I do with meatloaves or other large casseroles is to mix the chopped or marinating ingredients before adding to the meats. That way, they are already evenly distributed and combined before adding to the rest of the ingredients. I love your road trips. Your videos bring a sense of calm, love, and friendliness to what can often seem like a very unwelcoming world. Hi Kevin, I just love your channel -- your vidoes are so calming and I always get something out of them. Thanks for these freezer meal ideas -- great for someone like me who works full-time and lives alone. I have some casserole recipes that could be put into containers or freezer bags and frozen -- one is fried pork chops with rice. I season the chops with salt, dredge them in flour, fry them in oil, till browned and place on top of some white rice in. acasserole dish that I've seasoned and to which I've added some cream of mushroom soup. You then cover with foil and bake in the oven for 1 hour at 350F. You can prep it a day in advance, (all but the putting it in the oven) and I don't see why you couldn't freeze it after it cooks and cools down.
I have recently discovered your videos and have been watching and enjoying one every evening. You have a unique gift of making the viewer feel as if I am a friend who is accompanying you as you travel around town running errands, cooking up something luscious, decorating, or just living your daily life. Although I realize your life circumstances and most of your viewers’ circumstances are very different economically, the recipes you post, the little life’s niceties and decorating suggestions that you share with us can easily fit into or can be modified to fit into lifestyles of almost any financial circumstance. i am also a big fan of batch cooking for the freezer. prepare in one day, eat for a month or even two! my favourites include chicken cordon bleu, eggplant parm, soups and stews, and especially tomato based sauces (marinara or meat) which freeze very well and give you the taste of summer in the winter time
I turn on a KLJ video, watch the beautiful home and great recipes, and I’m instantly relaxed. I also put broccoli in my GF macaroni and cheese (but no sausage). It’s good that way, and it’s a great way to eat more vegetables.

Throughly enjoyed the video. My favourite freezer meals are Shepherds Pie and Moussaka - they are both easy to make as bulk meals for the freezer and are invariably standby meals waiting in the freezer when we return from holidays and I do not not feel like cooking!

I rarely freeze recipes mostly because my freezer is small. But I'm anxious to make the teriyaki thighs. Love tulips in January! Adore your pets too.

i am also a big fan of batch cooking for the freezer. prepare in one day, eat for a month or even two! my favourites include chicken cordon bleu, eggplant parm, soups and stews, and especially tomato based sauces (marinara or meat) which freeze very well and give you the taste of summer in the winter time

My favourite freezer meals are Shepherds Pie and Moussaka - they are both easy to make as bulk meals for the freezer and are invariably standby meals waiting in the freezer when we return from holidays and I do not not feel like cooking!
