Italian Sausage Soup
Ingredients
• 1 pound Italian sausage
• 1 small onion diced
• 3 tsp minced garlic
• 4 cups chicken broth
• 15 ounces canned white beans drained and rinsed
• 14.5 ounce canned diced tomatoes with juices
• 3 carrots peeled and sliced
• 2 stalks celery sliced
• 1 red bell pepper chopped
• 1 cup tomato sauce
• 1 cup tomato juice
• 1 ½ teaspoons dried Italian seasoning
• 1 zucchini sliced
• 1 cup medium pasta uncooked, penne, rotini or shells
• 1 cup packed fresh spinach
Parmesan cheese as garnish
Instructions
1. Brown Italian sausage in a large pot until no pink remains. Drain fat.
2. Add onion and garlic and cook for 3 minutes or until onion begins to soften.
3. Stir in broth, beans, diced tomatoes, carrots, celery, bell peppers, tomato sauce, tomato juice and Italian seasoning. Bring to a boil, reduce heat to simmer. Cover and cook for 8 to 10 minutes.
4. Add the zucchini and cook an additional 6 to 8 minutes or until vegetables are tender. Additional broth can be added If needed.
5. Meanwhile, cook the pasta to al dente according to package directions. Once cooked, drain well and rinse under cool water. Set aside.
6. Once vegetables are tender, stir in the spinach and cooked pasta. Cook until heated through and spinach is wilted, about 2 minutes. Garnish with parmesan cheese if desired, and serve immediately.

It’s suppose to be really cold here today,and I am thinking it will be even colder there at your house.so try to stay warm. We all need to pray for the people in Selma Alabama that was effected by the tornado, Marie do you ever make a recipe for asparagus ? Racheal Ray and Pioneer Woman are very nice gifts and good quality pots. I do the paper towel trick to soak up grease too. I saw someone else do that. It makes getting grease out much easier. Oh my your soup looks so good. It's supposed to be cold here in Florida the weekend. This would be good on a cold night. I used V8 tomato juice before and didn't like the taste but will try the Campbell's tomato juice and see if i like it better. I hope no Tornado touches down.

Thanks very much Matthew. When I was contracting I would drive two to three hours each way many days. On other days I sometimes only drove 30 minutes to an hour each way. It makes for a lot of miles on your vehicle. Be safe driving.

Yes, sometimes we cook the pasta with the soup but we add a little extra liquid when we do. Frozen spinach will work also.
