I let my third ever brisket rest for over 4 hours on accident this past NY’s.. I got so busy before we could cut into it. Family is always late for the functions. Lol. It was the best mistake I’ve made in my life! My wife’s family was mind blown by the brisket. My thermometer was also faulty so I was smoking very low at about 210-215, thinking I was at 235-250… so glad that thermometer was not calibrated well also. Best brisket I’ve ever made.

I usually just leave all the fat on. I did the trimming of all the fat off a couplw times. And it turned out better not trimming anything off
The fat would have protected against his overcooking.

Yeah the longer the better. Most BBQ joints in Texas rest their Brisket even longer, up to 12 hours or more
Did you cut like 1/3 off of it? What did you do with the trimmings?
That hard fat will not render down and will just be a blob at the end of the cook. He said in a different video that he uses the fat in his burgers

What was the foil paper for?
Sometimes when the point that is facing the smoke box get a little too crispy (it’s facing the fire side of the offset so sometimes it takes a little too much heat compared to the rest of the brisket) a piece of foil can protect it a little and act as a heat shield.
Keep the end-piece from turning to charcoal...
is what the foil paper's for.
All that "aerodynamic" trimming is eyewash.
They taste just as good untrimmed if you cook them right.

I never understood why people trim so much fat off. Wouldn’t that just enhance the flavor, or is that just a personal preference? I personally enjoy a fatty cut.
It won’t render like the rest of the meat. Better to use the trim for sausage or burgers 😊
