    INGREDIENTS :
    2 cups cooked basmati rice
    1 carrot grated
    3 tbsp ghee
    1 tsp jeera/cumin seeds
    8-10 cashews
    1-2 slit green chili
    2 cloves, small cinnamon stick
    1-2 green cardamom
    ½ tsp garam masala powder
    1 tbsp lime juice (optional)
    salt to taste
    METHOD:
    Heat the ghee/oil in a pan, add jeera/cumin and whole spices, and saute for a few seconds or until aromatic on slow flame.
    Next, add cashews and saute until they turn light golden. Add 1 tsp finely chopped garlic and saute until the rawness vanishes. Add green chili and grated carrot, some salt, and simmer for a minute on low heat till it changes its color (do not overcook).
    Furthermore, add cooked rice and gently give a good mix (making sure the rice will not break).
    Lastly, add lime juice (optional), and garam masala and gently mix.
    Now it's ready to serve, serve hot with raita and enjoy!
