    I was given the shoulders off of a whitetail deer. Normally I would make hamburger meat, chili meat, or sausage. But, today I decided to make tamales.
    Growing up in south Texas, I learned to love tamales. But, not all tamales are created equal. Sometimes they're good and sometimes not so good. Here is a quick video of how I make them.

    I don't claim to make the best tamales, but I make good tamales. It is all about maximizing the flavors like reserving the cooking liquid from the meat to make your masa instead of plain water. Cooking your meat for a long time with chilis, garlic, onions, and spices.
