You can definitely leave the seed in it, I think it's the seed that makes the color more red. You just have to throw it away when eating. Gac is good for your eyes as it's red which means having lots of Vitamin A. And your pronunciation of "Gấc" is purfect 👍🏻
I bet it's good. I grew up eating "Milchreis", which is a sweet rice dessert. In Germany they sell it like yoghurt at the grocery stores in many different flavors. Honestly my favorite was the plain or cinnamon one. Chocolate was yummy, too. But rice pudding ideas are endless. So many fruit toppings to mix in available. I bet they have coconut by now. You make me want to cook some 😊.
It's hard to go wrong with sticky rice and coconut milk. That's my favorite brand of coconut milk also. It's much cheaper to buy the trai gac in a can, although it's still pricey. I like the way you steamed the rice. Our cute little Emmy hit another home run.

I'm not gonna lie, I also thought your xôi gấc looks more like a tomato based rice dish. The colour is usually more saturated and kinda orangey. And you should've used a seed as decoration to be as authentic as possible! :D A lot my older female relatives regularly make various xôi. While traditionally sweet I think in my family our xôi gấc tends to be unsweetened; either way it goes well with savoury dishes! (Or go full on dessert/sweet snack by topping the xôi gấc with crushed peanuts, sugar and/or shredded coconut. Or in the case of a xôi that is already pretty sweet, my parents will do the same but with salt instead of sugar for a sweet-salty snack.)

You can make easy glutinous rice in a instant pot: one cup of rice, 2/3 rd cup water in a metal bowl placed inside the pot. Place the trivet in the bottom of the instant pot with one cup of water. Place the metal bowl on the trivet and cook on high pressure for 13 minutes. Natural release. No soaking over night!
I'll give Emmy credit for (what I'm assuming) is a more traditional preperation method. But I agree with you Bergkatse2, as I was watching the vid I was wondering why one could not just dump the whole thing into a rice cooker. A quick Google search at the end is showing me that folks make coconut rice with coconut milk all the time. So it certainly seems plausible. There’s a restaurant in my town run by a lady from Guam. She features Guamanian and Filipino food on the menu and biko is definitely on the menu!

You should try canepas, a fruit I fell in love with in Puerto Rico. It's sweet and sour and has the most interesting texture :)
