    Thank you! I just got one for my birthday. I went by the simple recipe for vanilla ice cream. Made a test batch for the dog. It's ok after being in the freezer. But not what I was wanting. But after watching a few videos, I believe my problem is, my bowl didn't get frozen enough. Going to try a new batch, making the base, and cooling it down. I've learned so much. Hopefully my next batch will turn out better. I'm not giving up! If I can learn to make all kinds of bread, I'm dang sure I can make ice cream! Thanks again!

    Thanks for addressing the problem of the ice cream freezing to the sides of the bowl. I'm having that problem and it really does make a difference to the end product. I end up scraping it off and incorporating it into the finished ice cream, but the texture changes then. I will try your method of using my thumb to push the dasher.

    Ciao Ruben, it seems you use the same recipe for icecream as well as video making: hard work, passion and professionality. Very well done! Not having the money for a Lello Musso Mini or a Nemox 1700, I was happy to hear from you that the Cuisineart ICE30 makes an excellent icecream even if it uses passive freezing. So I ordered it yesterday :) Now I am wondering if you tried frozen yogurt and if I can make vegan icecream with this machine using almond milk and vegan cream and of course no eggs. Any suggestions? Thanks a lot and ciao from Italy!

    • @Rubenp123
      @Rubenp123  8 лет назад +2

      Hi Annie! Great to hear that you went with the ICE30! How are you getting on with it? I haven't tried making frozen yoghurt myself but the ICE-30 can freeze and churn both frozen yoghurt and vegan ice cream. I'm in the process of researching vegan ice cream and hope to post my research on the blog. I don't yet have a vegan recipe but I'm working on it! :) All the best to you in Italy, Ruben.

    Thanks to your video demo, I now know that the mixing arm is supposed to remain stationary. Very helpful to know, as the Cuisinart instruction booklet and demo video do not indicate this.

  • @MercSLRFan
    @MercSLRFan 11 лет назад

    Wow, with the freezer set to super freeze the texture is so gummy. Definitely need to give it a go. Also, I like how you scrape the dasher over the bowl and then transfer the mix. They way I used to do it was such a faff. In the future I'm thinking of upgrading to the Gaggia ice cream maker with the built-in compressor. Maybe you should give it a try.

    I just got one of these and made my first batch. It came out hard but still tasty. That buildup between the dasher and the bowl turned out to be a lot thicker than the original gap between the bowl and the dasher. I'll have to do that thumb trick. I can't see inside, so I have a couple questions. Are you pushing directly on the dasher's blade? (I doubt "blade" is the correct word. I mean the part that touches the bowl.) It looks like you are, but your thumb seems to come out clean. Also, what are you doing with the spoon at 3:33?

    • @Rubenp123
      @Rubenp123  6 лет назад +1

      Hi there, yes I push directly on the dasher blade, towards the top of the blade to avoid touching the mix. At 3:33, I'm moving the static clumps of ice cream that form on the slight horizontal bit of the blade. It's a good idea to keep the ice cream constantly moving against the cold bowl wall; static clumps in the warmer centre of the bowl will have larger ice crystals and coarse texture. Hope that answers your questions. Let me know if you need a hand with anything. All the best, Ruben.

    • @thethegreenmachine
      @thethegreenmachine 6 лет назад +2

      +Ruben Porto Thanks, that answered them. I just made another batch, and I found another reason why not to make a full 2 quart batch. It makes it hard to see any of those static clumps. Also, that thumb trick soon becomes frozen thumb torture :) (I used a wooden spoon instead.)

    I hope someone watching this can help. The company who makes these machines are not too good at answering messages it seems.
    I have only used this once because of the disaster it turned into. Ended up with the side coating (which, thanks to this video, I can fix) and almost 1cm of coating stuck to the bottom which required soaking to remove. The rest was icy. I followed all instructions and recipe to the t, and used the spoon just like Ruben did. It all went down the sink with hot soapy water. I really am stuck with this, so any help would be appreciated.

    Hi there, i got this machine the other day. I also found the mixture sticking to sides as you say in your video. I had it on the bottom also. The dasher doesn't touch bottom of bowl either i think as build up was there too. In your video what recipe are you using out of their manual?

    thank you for explaining the use of your thumb to scrape the bowl. Mine is smaller so I'll experiment with that. Is there a reason why you use wooden spoons? Is that better for scraping the bowl?

    • @Rubenp123

      A wooden spoon is what I had available at the time and they are quite large sturdy when it comes to scooping out the ice cream. A large plastic spatula would also work :)

    Nice tight production, but could use metrics to help with comparisons with other machineds Clock for speed of churning, Clock for over all production, Thermometer for start and end temps of ingredients, and pre and post temp of frozen churning bowl. Also is there a test for granularity of ice crystals? Do you measure per cent air by weight? Over all, Well Done!!! :-)

      Jonah Zelinka Hello Jonah!I have made sorbet in the machine before and it came out great! Never tried gelato, although I'm sure the quality would be as good as the ice cream. It will depend largely on the recipe and preparation method you use, not so much on the machine. Hope that helps.

    Have you tried the newest model? the 70? I read where one reviewer on amazon says there really is no difference in operation to the 30 and they feel like the company is blowing smoke up the general publics dairy air (pun intended). Would love to know what you think before I make my purchase between the two. They boast a better arm design and faster production time on the 70 yet I see their average doesn't seem to waver much from 20 to 25min. on any of their products.

    • @Rubenp123
      @Rubenp123  8 лет назад

      Hi there! I haven't tried the ICE-70 but it does look like there is no beneficial difference to the ICE-30. They both use the same freezer bowl and the dasher speed settings seem to be redundant. Dairy air - that's good! :) Faster production time is nonsense as this depends primarily on the temperature of your freezer and the freezer bowl, not on the machine itself (although faster dasher speeds - not applicable on the ICE-70 as domestic machines aren't capable of fast speeds - and more efficient scraping of the bowl wall, by having the dasher closer to the wall, does also contribute to freezing time). I'd be interested in seeing how close the dasher gets to the wall though. My guess is that Cuisinart have just updated the ICE-30 with a better looking machine and I don't think aesthetics are worth the extra money. I'm confident that the 70 produces the exact same textured ice cream as the cheaper 30. I hope that helps. Let me know if you have any other questions and good luck with whichever machine you go with. Ruben :)

      I used my Ice-30 today and it made Great ice-cream. I really didn't have the frozen to the sides issue as it all scraped right off with ease with the rubber spatula. It worked great! Thankyou for your skillful review and helping me choose what unit to buy. :)
