Mango Khatti Meethi Achar | Popular Nepali recipe | Cooked Mango Pickle

    Khatti Meethi or (खट्टी मिठी in Nepali), a famous Nepalese cooked Mango pickle (achar in Nepali) recipe is popular to every Nepali household. As the season of mangoes start, we prepare this spicy and delicious Khatti mithi recipe.
    The name is enough to define the dish with its perfect combination of both sweet and sour flavor. It is easy to prepare and very tasty, spicy and mouthwatering.
    To prepare the khatti meethi recipe, we need, raw (unripe) mangoes.
    Today I have taken,
    1/2 kilograms of raw (unripe) mangoes and cut it in long slices.
    For the sweetness, I have taken Jaggery. As alternative, we can also use normal sugar.

    Notes**
    Technically, the quantity of jaggery/sugar should be half the quantity of Mangoes.
    But in some cases, due to the sourness in the different varieties of mangoes , sometime we may need less or more.
    After adding the jaggery during the cooking process, we can taste it once and add salt, jagerry/sugar or spices if needed more.

    For powdered spices, we have taken,
    1 teaspoon salt (as per taste)
    1 teaspoon rocksalt
    1 teaspoon chatmasala
    2 teaspoons chilly flakes ( as per taste)
    A pinch of hing and
    1 teaspoon Turmeric powder.
    On dried spices, we have taken,
    2 teaspoons cumin seeds
    1 teaspoon fenugreek seeds
    1 teaspoon carom seeds
    1 teaspoon mustard seeds
    1 teaspoon black caraway/kalonji/kalo jeera (in nepali)
    2 teaspoons fennel seeds
    For the proper cooing, please follow the proper cooking instructions.
