Me and my sister have the same carrier. I was able to convert to esim, but my sister doesn't have the option even though we are both on ios 16 and higher.

physical sim card is deactivated / void once you convert it to eSIM

No - Once you've converted even if you delete the eSIM, your physical sim will still be deactivated. To get a physical sim again, contact carrier.
