Well, there's always the pressure of being at a trade show and being on camera. Unless you're a workaday barista, you don't really know the pressure of working under observation. And, if you're not slinging multiple drinks per hour all day, your technique won't be as sharp. The key when considering machines are to observe their capabilities and judge for yourself whether or not they will meet the necessary application.
