Use to go on a pheasant hunt every year in Smiths Creek. I soak them in butter milk over night then we use Drakes for the coating. But at least you had fun, and tried a new wild game you have not had. Bob.
We all loved it cooked it same day. Was it just the over seasoning u didnt like right? Not the meat..? I fried 2 diff ways 1 with egg bath then drakes, and the other I tried flour, egg wash, then back in drakes. Both ways were good for the time I wouldn't do 2 coatings flour again.

i do my in a smoker at 225 for a hour then wrap it in foil for a hour

Way to salty maybe I brined too long. Didn't care for texture either but who knows maybe I over cooked it.
