This potato peeler is like a household version of one that I used when I worked at a french fry stand at the NY State Fair back when I was 19 at the 1982 fair. The machine I used was more industrial type. It reminded me of a cement mixer with the spinning metal drum and then you would spray a hose into it while it spun.

It is ok as long as the skin is not sunburned. Potatoes sunburn very easily (lamps can even sunburn them). Sunburned potatoes have green areas, which taste disgustingly bitter.
