How do you know when you have the proper amount of chocolate in your mold. I hear a lot of people saying not too much and not too little which is different for a newbie wanting to progress from dipped to molds. Thanks!
Thanks so much!! Great question, it is hard to answer through a reply but I’ll try 😄 You’ll get the feel for the thickness when you tap out your molds through practice, but before that a good thing to look for is that your shells be around 1/16” I’d say. It’s hard for me to say how thick they are by measurement but once you shell your bonbons and scrape the mold take a look inside and see how thick they are. If they’re too thick you can tap out more. Just go by eye, you want them thin enough to not overpower the filling but thick enough to be structurally sound and protect the inside and also give a nice crunch when you bite!
When I think of running my small business, I am constantly seeking efficiency so I can save as much time and energy as possible. Can one pre-make their colored cocoa butter and store in the proper refrigeration for future use?
Sure! Do you mean after they’re done? I store mine in my wine cooler! It is around 57 F. You can store in a normal fridge but the humidity can make them a bit dull unless you pack them well (as airtight as possible) 🙂🙂
Just a general questions: I'm going to try using Ghirardelli baking chips for the 1st time, I wanted to confirm some things. I'll still need to temper it if I want a shine & snap,is that right? If I don't I'll assume it'll be softer than when I used chips also. Are they considered couverture chocolate? Thanks for your help
The short answer: I would not make bonbons using baking chips :) They aren't couverture and aren't formulated for this purpose. You can try using compound chocolate for bonbons, but do not mix it with cocoa butter. My recommendation would be to browse BakeDeco, that is where I buy most of my chocolate supplies. My chocolate melting tank is actually from an Australian company, long story, so I can't recommend it. Also...if you're really just getting started I would recommend buying a heat gun, immersion blender, and a couple nice propylene bowls for tempering. Nothing! Properly tempered cocoa butter and chocolate will shine when molded against a shiny surface. In this case I decorated a polished heart mold with tempered cocoa butter and so it comes out shiny. Check out more videos to learn more about cocoa butter, tempering chocolate, and how to mold! 💞
Hmmm so far I haven’t been able to tell a difference. I don’t taste it at all, unless sometimes when I do a fully hand painted design. Just because of the process the cocoa butter can just end up a little bit thicker than airbrush, but it isn’t a bad taste just a taste. 😄

Yes of course! But no need to store in the fridge, in the pantry away from direct sunlight and around 69-72 F is perfect.

Hello! I didn’t know there was translucide and opaque Colors. How can I distinguish them? Is it written in the description on the bottle?
You should know by checking the ingredients for titanium dioxide, which is white and white is what makes the colors opaque 😀
