You probably shouldn't watch production videos for any other food product then, since basically all food production factories look like this, especially for any food that is powdery or at all wet. The only pretty, clean-looking part of factory food production is the packaging you see in stores.
Most likely the first conveyor they land on are chilling pads to freeze the still soft fresh ice cream. The clamps section is (judging by the chocolate on them) the section where the ice cream would be dipped in or drizzled with chocolate if they were running a different product that needed it, and then given time for it to harden on the way to the packaging section. I couldn't tell you why the clamps just drop the ice cream on the packaging flights requiring a worker to manually fix them, instead of using a chute or whatever, but I'm sure there's a reason for that too.
