    I work outside in the heat, so being able to put this in a thermos to keep ice cold for lunch on a hot day will be great! Thank, Chef Jon! :)

      Ok, it will be refreshing and it does have some fructose in it, but, if you're working outside, might I suggest a cooler with one of those plastic cooling elements filled with antifreeze solution which will absorb a lot of heat if you freeze it before use, along with a pasta salad or or a chicken salad wrap or something which actually has a usefull amount of calories in it?
      Not to knock it, but gazpacho is basically flavoured water with some fiber in it (even though, as stated before, this one does have some natural sugar in it). Doing physical labour outside is not sustainable on this recipe, even if you'd eat the entire batch daily. Ask any person who does an endurance sport what exerting yourself, fueled by your internal fat reserves feels like... they'll tell you it's a situation to avoid.

    The store didn't have any yellow tomatoes, so I used all red. I lost the gorgeous color, but the taste was phenomenal.

    As someone who both loves to cook and is a deep and lifelong boxing nerd I must give mad props on the Hector Camacho reference, he was a wild personality and a entertaining and skilled fighter, miss watching him fight and was gutted when he died to gun violence. This recipe is easy and looks great. We are gearing up for our first triple digit heat index day here so the weather will be perfect to give it a try!

      Me neither, my aunts teach my father how to make it, and when I try it I found it vile and digusting, with time I have to understand that my aunts were wise, supporting and marvelous women, and very bad at cooking, but this recipe has make me think about trying it again.

    Whoa I was having Gazpacho while watching this actually! Except for my recipe, I subbed strawberries for the peaches, a banana for the sweet pepper, blueberries for the onions, raspberries for the tomatoes, and I also used a bit of peanut butter instead of a cucumber. I also added ice cubes to cool it all down. I guess you could say it was pretty smooth 8)

    the key to a good recipe for gazpacho is one that allows you to perceive with subtlety the flavor of its basic ingredients: tomato, oil, cucumber and pepper (green). that's why it's better not to abuse other additives (cumin, pepper, paprika, feta ...). I recommend using only salt and decorate it with pieces of boiled egg and serrano ham.

    Take that stuff left in the strainer, spread it on a baking sheet, bake on super low heat until dried, then pulverize and you've got tomato powder, a great spice.

    Amazing as always.
    My gazpacho recipe: 1kg good tomatoes, 40g onion, 40g red pepper, 300g cucumber, 1/2 garlic (optional), extra virgin olive oil, good white vinegar, water, salt.

    Cucumbers and Bell peppers are also fruits along with the tomatoes and peaches. Really interesting I never heard of such a soup. Only vegetables here are onion and garlic. Really cool

    All the gazpacho recipes I've seen have involved making a big salad and putting it under presses for a couple hours in the fridge before blending, I like the streamlined no thrills approach of just tossing it all in the blender right away.

    A note and tweek: I made this exactly according to the recipe. Mine came out very thin, like really yummy but watery V-8 juice. I used ripe cherry tomatoes. I would make this again but gradually blend in the small amounts of water after the soup is chilled to get the desired level of consistency.

      the yellow and orange ones are outstanding. a little less acidic than the red, but with all the flavor. orange bell peppers are really good too, and easy to grow.

    I love refreshing cold soup. Next time gazpacho watermelon with feta and mint or Greek yogurt (tzatziki) soup or mango - orange soup with brunoise onions, homemade vinegar salty soft cheese and basil.

    omg Chef John! I was ready to pick it up and drink it down by the end! Cucumbers! Sungolds! Peaches! Feta! Basil! That gazpacho tastes like heaven feels! I will make this recipe one of my core summer treats as I can never consume enough Sungold tomatoes! I also would like to try it with Nectarines :)

    I run half of my tomatoes, cucumbers, mango or similar fruit through the ¼" die of my meat grinder because I prefer more texture. I also balance with rice vinegar.
