And when the stuffing came out of the casadilla it made me anxious to see if you would be able to flip it without tossing it - but you did an AMAZING job of it! I am learning so much from you that's been such a HUGE help to me in my carnivore journey. I started on July 1, 2022 and have lost 34 lbs so far. Watching you is so encouraging because it helps me learn ways to keep meals interesting and not get bored eating the same old things day after day.

My deepest sympathy for your losses. 💔 My grandson’s aunt passed last week. She was only 45. She was one of the dearest, kindest people. She will be deeply missed. I channeled my sadness into making a shadow box with her name and words that described her on my cutting machine for the family for their celebration of her life.

Anita, I love watching you cook. You don't mind showing your flubs, that makes it real cooking. For future pan cooking, you could get a big plate and put it over what you want to flip, and then slide it from the plate back into the pan. Just an idea. So very sorry to hear about your Aunt and Mom in just a short time period. Take time to sort out all of your good memories, and let any bad ones fade. They will most likely be having a good time together now catching up with any and all family that was there to greet them. Hugs from the very East part of Canada.

I do the one wrap and fold it over, much easier to flip as you said. Another hint is to put cheese down first, then your filling, and more cheese. That kinda makes it melt both sides together. Take care!

On another note... If you place a plate over the skillet and invert your pan and plate you will avoid the mess (although I enjoyed watching you make a mess). I use Indigo's crepes for tacos and burritos. I've cut them into strips to make noodles for chicken soup. They make great breakfast wraps too. Give Teddi and Pippi scratches for me.
I thought about using a plate to flip right as I was doing it but too late then!
Anita I enjoy watching your program whether I can use your recipe or not. This particular show gave me inspiration for a few lower cost and EASY meal to prepare either during the week or weekends! I bought a sous vide stick after watching you use it. I never liked chicken breasts because they were always dry, but oh my, when I sous vide cook them they are so tender and juicy! It's the only way to go! I also love Indigo Nili's egg white wraps. They are so delicious and versatile. The wraps also make great crackers. Thank you for all you do!

Hi Anita, love watching you cooking you are such a natural. Sorry to hear about the loss of your Aunt. I have been waiting for you to do a new video and thought you would be in your new home by now. I to am moving. I retire on the 31st March and am busy packing and just managing with the bare essentials so when it’s time I only have to chuck the rest into a few box’s and off I go.
