Wolverine continues to be my favorite character, writers put him through hell (literally) and it's all the more satisfying when he triumphs immeasurable odds

I think Logan was just bloody from all the blood coming out of slaughtering nearly the entire Hulk family moments before. And I think Bruce was more just wrestling around with him trying to avoid being stabbed, until Logan eventually did. But sure you could think of it like that.

The flashback to the Red Skull killing Captain America, and the Red Skull’s trophy room with bits of fallen heroes in cabinets, were for me the saddest parts of this comic.

Superhero comic book writing isn't consistent, they just want a sensational story so they break their own rules to make it happen.
Yea...no. Even if he bit wolverine's head off and chewed him up bit by bit there is sum he possess called the master cell which allows him to regenerate even if it's just from a small part of his body so no it's not poor writing. It's just the writers expect you to know what the heroes are actually capable of.
