I'm not originally from Java but since12 years ago when i first visited java island and experience its Original food heritage, i feel like javanese ancestors has very diverse traditional food recipes and its actually pretty palatable to any culture taste bud, but nowadays with so much cultural exchange food within the country many younger Indonesian prefer more sweat and simple food that foreign dishes easily provide, thus it is becoming harder to find these "famous" traditional Indonesian food that many tourists are seeking. It is a domain that government should take to preserved what we have so that Indonesians and tourists like you can experience it easily.
Cincong as you wrote it is actually Cassava in English. Sort of a distant cousin of Yam or sweet potato. Adding coconut to deserts or even dishes add savory/sweet flavoring that is ubiquitous in Indonesian foods.

You should try solo’s authentic cuisine, its called ‘ketoprak and ‘tahu kupat’. I live in jakarta, we have ketoprak and ketupat too here but its different from the one in Solo and Ive never had those cuisine outside solo, i couldn’t find them
