This is so incredible. I love how 1.21 isn't even out yet (and these features aren't technically "finalized") and people are already utilizing the new crafter mechanics to the absolute fullest.
From an engineering standpoint, I've always loved the concept of "kanban" and just-in-time production, so seeing those principles put into redstone is _massively cool._

It certainly helps to have the crafter on my survival server, Hermitcraft-style (via datapack) :)

I imagine you can hook up many farms to the system? and farms through a nether and end storage?

Yes, in principle you can hook this up to any storage system that allows you to fit a bit of redstone to read the lowermost chest, and has one item per chest for these. (Naturally with a multi item sorter the system wouldn't know what to craft.) So you could integrate this in a large bulk storage that sorts shulker boxes from farms etc.
It might be interesting to keep the ingredient store automatically stocked. Right now I just throw in shulker boxes from my farms in the unloader and have a cheap blinky blinky that notifies me if one chest is empty ;)
