    My favorite part of cooking is seeing how foods become tradition in a place by simply using the ingredients local to their area. Cooking has so much more to do with the culture and geography and using what’s available in the place you are. That to me is a beautiful thing that I think often is overlooked.

      That is so true! Mostly what becomes popular is what the common people create, share, and enjoy. It only becomes a delicacy when it’s enjoyed by the rest of the world!

      No one is preparing this meal like this. It's literally unhealthy for a dog. If this "soul food" was that good and a percentage of blacks were cooking this daily was isn't there a multitude of "soul food" restaurants in or outside of the black "community" for other cultures want to eat/ You know, like the Asian, Italian, and Mexican cultures have restaurants in and outside of their communities. The way that I look at "soul food" is like having a slice of pizza, a taco, ramen noodles, and salad on your plate with a bottle of Sprite. There's nothing original.

    Sweet potatoes are organically grown in US as well. We just have alot of varieties. I prefer the white or the yellow variety. Good job on soul food. There are a.ot of greens that we fry down South. Mustard greens are cooked with pork and the pot liquor is amazing...especially on a cold winter day. Collard greens are cooked differently. But you did an amazing job. 👏🏾 👏🏾👏🏾👏🏾👏🏾

      @@cosworthTV Haven’t seen her genuinely enjoy eating with enthusiasm anything he cooks which was the energy that attracted me to his channel to begin with. Now, my anticipation at the end just falls flat every time she cringes in distaste with each bite. Kinda ruins the entire vibe. I totally get her pallet is not accustomed to Western food but it still kills the vibe. I enjoyed all the vids he did solo before. Kept waiting for it to improve. I’ve unsubscribed. Now I search for his channel every so often just to see if he’s returned to Canada yet.Even then I think he should either be the only one who eats the food or wait until she acclimates enough to crave Western food before he includes her in the taste test which regrettably is a slim chance. I prefer to watch other cooking channels where people are savoring the food so intensely it makes me want to recreate the recipe. Sad.

    When it comes to greens Collard, Mustard, and Turnips are all considered soul food. I like a mixture of all 3.

    I'm with the wife. I hate lemon pepper seasoning! Lol you killed the Mac and cheese with that darn hot sauce. Lol Also, it's good to do a sharp, mild, and creamy cheese. It's not real cheese but adding Velveeta to my mac is a must! But I've had plenty that didn't have it and it was still tasty. Next time try a honey garlic glaze for the seafood!

    Interesting taste discoveries. I'm Chinese American and sometimes I don't like lemon taste in food but sometimes I do. I like subtle flavor of lemon more than fresh lemon juice. I enjoy lemon candy, lemonade, and lemon iced tea, but not lemon meringue pie, lemon juice, or lime flavored things like Takis. Sometimes I like salmon with lemon but I prefer it without. And I haven't tried lemon chicken yet. The flavor is nice but the sourness isn't, in my opinion.

    Quang… my grandma would use not only collards, but mustard and a turnip greens , all three combined… collards are the toughest of three and take the longest to cook down, she also used smoked turkey necks for seasoning

    So we actually make mustard greens with turnip mixed so that was good, the only things u forgot was fried fish and cornbread. Btw my fam loves lemon pepper

    Cajun (the salmon and shrimp) isn't necessarily soul food, though. I knew she wouldn't like the mac & cheese as I never got the hype on it, either (too thick, rich, and cheesy, and I'm a major cheese lover). And yes, the sweet potato casserole is too sweet unless you're used to it. It's like eating dessert until you're used to eating it. I knew she'd like the greens as that's similar to eating canh chua (the one made with pork ribs and pickled mustard greens).

    Lemon is take away the fishy taste of seafood is why they use it. Otherwise, if you don’t mind fishy taste of seafood, use other ingredients

    The Vietnamese taste palette isn't similar enough to the Southern African American palette. It probably has nothing to do with Quang's cooking. Any Asian American or Asian countries that like more savory and sweet food like Korea, Japan, Thailand or Malaysia will love Soul Food. I'm Asian American born and raised and I don't know one Asian American person that doesn't like Soul Food. It's objectively one of the best cuisines in the world when done really well.

      Sorry, I disagree. I'm Asian American and came here at a young age. To this day, I don't like Mac & Cheese and don't get the raves about it. Candied yams and sweet potatoes and such was way too sweet for me. But I've since gotten used to it, but I'd make mine less sweet than how it's traditionally made. SE Asia does sweet and savory, whereas Korea and Japan don't really do sweet in their foods. If you grew up in Asia and didn't eat Western foods until you were beyond the age of 20, many foods will not appeal to you. I knew right away she wouldn't like the Mac & Cheese and the sweet potato. But I also knew she'd like the greens because if made a certain way, it's very similar to a Vietnamese sour soup made with pickled mustard greens and pork ribs.

    What I did like was the honesty in this video. It seems no matter who cooks it's banging. But, your family keeping it real with you is refreshing. While you smacking and acting like it's wonderful.
    As far as the meal. 🤔 I think the greens looked the best out of everything. The shrimp looked good. Everything else was not it. The wrong pasta for the Mac n cheese and too much hot sauce or none at all would've been good. I didn't expect the yams to change to that consistency... If so, sweet potato fluff would've been the best course. Salmon🤔 I've never had it as a soul food meal. But, I also don't like salmon so it's a miss×2 for me on that. But... Yeah... Lemon pepper seasoning I think only really works well on chicken and just a dash. Obay would've probably been better. Nice job tho. And y'all do make a very cute couple even the bro is cute.

    I feel like this is because Quang is used to these foods so his palette is different to his wife’s who is used to traditional Vietnamese flavours. It would be the same for anyone not used to particular flavours and combinations - from a young age my parents introduced me to lots of different flavours and cuisines so now I appreciate all foods😋

      What is this "black cooking"? Mac and Cheese wasn't created by blacks. Frying or baking chicken and fish isn't "black cooking"? Eating Collards that was brought over from the Middle East and Asia isn't "black cooking". None of this is eaten in Africa and no blacks are eating African foods as part of the culture. All of these meaningless terms being used like "soul food, cookout, for the culture" just makes this "particular" group desperate for an identity.

In that case American cuisine, and many other world cuisines, don’t exist as their foods don’t originate from the countries in question. This "particular" group have went a step further to put a label on something that they eat a lot of like fried chicken and call it "soul food" just because a black person cooked it. But work at a non black KFC, Popeye's, etc. restaurant in their own "community".
      Now there's some individual that created this dumb cliché about invites to a "cookout" i.e. BBQ at the forest preserve that they do not get a permit for or at somebody backyard. So no one have cookouts?
      Why isn't this considered American culture? Because, this is what it is!
      There's no other group who are saying or doing this foolishness.

      There are many varieties of sweet potato.
      The US mainly has the orange yams (turnipy) while Japan and Korea has the purple (very sweet, not savory).
      I find the latter to be fine by itself, and not well paired with any other ingredients.

      vietnamese cuisine will 99% of the time contain vegetables and greens or be paired with vegetables and greens so its very much lighter. American food is very heavy on the fats. It took me a few years to get used to american food but now i cant live without it. might die sooner though hehe

      @@thienpham1939 Viet food is definitely fresher and lighter. There's a balance of sweet, salt, sour, etc., and most things come with a platter of fresh herbs or veggies. No other cuisine uses fresh platters of herbs like Viets do. However, I have to disagree with you on the heavy on fats. We eat fatty foods, we just eat it differently. For example, we'll eat pork belly all day because we love the fat in it. But really rich and fatty foods won't go over well with those whom grew up eating Vietnamese food and Mac & Cheese is the epitome of really rich, fatty, and heavy. The greens he made for her, I knew she'd like them because if made right, they are similar to Vietnamese canh chua made with pickled mustard greens and pork ribs (not the fish canh chua, which uses different veggies).
