Jacques Pepin - New Year Celebration

  • A family friend is graduating from college, and Jacques needs no better excuse to create a splendid al fresco buffet lunch.
    A delicate Smoked Trout with a creamy Egg-and-Pepper Salad is just right for a sunny June afternoon. And Jacques classic Chicken Galantine - a boneless chicken stuffed with pork, black mushrooms, pistachios and armagnac, poached in a rich stock and served in its own aspic - is a decidedly elegant picnic food. A succulent baked Ham Georgia with a tangy apricot-mustard glaze and a deep, sweet-savory peach sauce is paired with a simple side dish of buttered Red Swiss Chard. For the cheese course, we learn how to make creamy fresh-herb Fromage Blanc served with roasted garlic. Two marvelous desserts complete the buffet - Chocolate Cloud Cake, a spectacular layered confection of fluffy sponge cake, cognac whipped cream, and crunchy chocolate cookie crust, topped with a bittersweet chocolate glaze, and a Cherry-Raspberry Pillow of fresh cherries and berries baked in a puff-pastry pie.

    This was a most beautiful of all of Jacques Pepin‘s videos that I’ve ever seen, with him cooking with his beautiful daughter, Claudia, preparing such incredible beautiful fare.
    How very charming for it to be raining while they’re in the tent. I know I would just love that, to be right there with them.
    Jacques, unbeknownst to him, has been my mentor for years. I have learned so much from him and my family and friends have benefited from that!

    Just came here after I watched the Memorial Day Weekend Stream. I really love this episode of Jauques Pepin cooking with his daughter.

    I don't see what graduating has to do with New Years. This episode is better for June when students are actually and usually graduating.

    Wow, Mike Wallace is there. It's nice to see this halcyon time. We now live in a more suspicious and divided age, with high crime and shootings anywhere and everywhere. But these vids give you hope that times like these, even without these great people, may come again.

      His wife never appeared in his cooking segments, though she did appear in the party scenes and at table.

      Not sure of the date but his wife has passed away. I think in 2022.

      She did pass away…but she has never been in his cooking shows…appears on camera occasionally in party scenes. I have watched him for decades…

      @@liannebedard5521 Gloria has at least made one cooking segment appearance in the Thanksgiving episode I believe and at least two cameos in the short videos where he looks with their granddaughter Shorey. But yeah, that's kind of it.

      Yes, Gloria was not a big fan of the media attention. When Jacques started doing cooking videos closer to home, she wanted him to film at their guest house instead of their main house. Even basically threatening to divorce him if Jacques didn't.
