Braised pork belly over rice is what my grandparents used to sell in their old shop. Even though they stopped years ago, my lola still cooks them at home to this day. Like Eric’s resto, it’s their best seller! Sometimes my late lolo would give some customers (most especially nursing students since their store was located across a med school) refills of the braised pork belly over their rice. They’re their regulars (or “suki” in our language) so it was no biggie hahahah!

Occasionally ham or hot dogs. Pork belly and pork stir-fry/ Asian recipes for pork are the only times I like pork on a regular basis.

It really is very similar to some dishes in Vietnam. It's like Vietnamese stew and pickled mustard green. But it does not use soy sauce ingredients instead fish sauce. The fish sauce may smell a bit heavy, but combining them with stew recipe is pretty good :))) If you have a bowl of steamed rice with a stew with eggs (either Boiled eggs with stew or fried eggs are fine) and served with pickled mustard green. 🤤 It's really tasty for lunch, dinner also breakfast (Because you can cook this dish first and then reheat) Oh and the meat that you choose to stew should have both lean and fat so that After about 3-4 hours of stewed meat, the meat will be soaked in spices, greasy and very soft 😋

I actually made bao buns with pork panchetta glazed with honey and balsamic vinegar, carrot flakes, spring onion and arugula. It's really not that hard if you get a steamer -I got a stainless steel collapsible steamer (save space!) for about 5 euro. No reason not to make on a day off.

Most restaurants spend the morning and afternoon preparing for the big dinner services. I would say majority of the time is on preparing and cleaning.
That's why cooks and chefs need to go to work around 6 to 8am even though the restaurant opens around lunch time. So much stuff goes into prepping
