  • Harvesting watercress is a little different than the other produce we grow. Requires different handling and process to harvest. Watercress or yellowcress is a species of aquatic flowering plant in the cabbage family Brassicaceae. Watercress is a rapidly growing, perennial plant native to Europe and Asia. It is one of the oldest known leaf vegetables consumed by humans. Considered a super food.... you should be growing and eating this plant!
    When I am in the greenhouse working, Doug is making great leather products for family and friends. He buys his leather by the side-veg tan and stains it himself. Everything is hand stitched.     Makes about 12 Fritters
    Ingredients:
    1 1/2 C Flour
    3 to 4 C watercress - cut up
    1 tomato diced
    1 onion diced
    2 green onions - sliced (use all parts of the green onions)
    2 eggs - beaten
    1 C water
    1 tsp Curry powder
    3/4 tsp salt
    Oil for frying (use about 3 Tbsp per batch in a frying pan OR you can use a deep fryer.
    Optional: finely chopped chili, 1 tsp backing powder
    Add all ingredients in a bowl to make a thick smooth batter
    Heat oil on medium high. Drop a spoonful of batter at a time in hot oil. Fry the fritters until golden brown then turn over and fry other side until it's golden brown as well.
    Serve hot with hot condiments.
    Watercress Soup
    Ingredients
    3 tablespoons butter
    2 cups white or yellow onion, chopped
    Salt
    1 cup white wine, chicken stock, or vegetable stock (wine or veg stock for vegetarian version)
    1-pound potatoes, peeled and cut into chunks
    6 cups water
    6 cups fresh watercress, about 1/2 pound, chopped, stems included
    1/2 teaspoon black pepper
    About 6 tablespoons sour cream, stirred in, or for garnish
    Cook the onions in the melted butter:
    In a large pot, heat the butter until froth. Then, add the onions, cooking over medium heat until soft and translucent, about 5 minutes. Salt the onions as they cook.

    Add the wine and potatoes and simmer:
    Add the wine (or stock), potatoes and water and bring to a boil. Turn the heat down to low. Cover the pot and simmer until the potatoes are soft, about 30 minutes.

    Add the watercress:
    Add the watercress to the pot. Stir well and cook for 2 more minutes.

    Purée the soup:
    Turn off the heat and purée the soup with an immersion blender. If you don't have an immersion blender, pour the soup in batches into a regular blender and transfer the blended soup to a clean pot.
    Be very careful when blending hot liquids to only fill the bowl a third of the way, and to hold down the blender's lid while you purée.

    Season and garnish before serving:
    Add salt to taste, then, add the black pepper.
    You can either stir the sour cream into the whole batch of soup or serve a tablespoon in the center of each person's bowl.

    I love it, I grow it too hydro on a small scale, Kratky method…. It’s good in salads too, I do find it close to arugula, cheers.

    Wow , everything growing looks happy , big and beautiful . CSA customers have to love delivery days !!! :) Congratulations Doug on your new line of leather goods. Very fine craftsmanship :) Will the cattle you raise every end up on the work table for a leather project ? Thank you both for the many great educational videos and growing healthy food tips. I hope more young farmers consider moving toward hydroponic growing for all the business benefits .

      Sounds like a cool idea but I hear the work needed to turn a raw hide into a workable piece of leather is a major undertaking.... think I'll just keep buying my leather and supplies from Weaver Leather. They are close and since I buy so much stuff, they have me as a wholesaler...so I get some nice discounts.
      We host Ohio State ATI agricultural classes a few times a year for field trips. More and more people are realizing that hydroponics is the way of the future in terms of suppling quality produce year-round without pesticides, herbicides etc... as required from traditional farming.

      so, we have a recipe based on our source water. Get your water analyzed and there are some formula worksheets online that can help you build your nutrient recipe.

    I wish my hydroponic plants look that good. Do you think the aeroponics in the trays is better than growing media? I have a small greenhouse. I am going to grow tomatoes and peppers like y’all do in bato buckets

      Aeroponics is very cool...it was just easy for us to go the nft route because we could scale up to grow as a business. Bato buckets are the way to go for tomatoes and peppers. You will have great results.

    I've been watching you for a long time and have gained useful information for my small home hydroponic systems. I grow most of my greens in my basement (kratky method) using artificial LED grow lights. I grow all of my peppers, tomatoes and cucumbers outside in Dutch buckets. I do not have a greenhouse , yet. I'm trying to find some land to put one or two up. I am curious as to the nutrient brand you use and your mix ratios in your greenhouse. I notice everything you grow is using the same nutrient concentrations. Is that true? I use MasterBlend for all my growing. I have tried others but without much luck. I would like to know what you use to hopefully eliminate some of my tip burn on my greens. Any help would be greatly appreciated. Is Devon ever coming back????

      It does don't cut really short, leave a few leaves and it will come back.

      5-10 and I don't thin. I just let the entire bunch grow and then harvest so the customer gets a big bunch of watercress.

      They are from CropKing I think 4" wide and 2.5" inch high.

    Its so green and lovely but unfortunately I'm a super taster. Certain plants taste wrong to me. Especially cilantro but I was shocked at all the rest on the list.
    Watercress, arugula, fresh basils(I do grow and dry them for cooking and I can cook with them fresh cooking changes the flavor) Swiss chard isn't a favorite but it isn't as bad as watercress flavor wise. Some mustard cultivars taste wrong but some are nice. Its hit and miss.
    And as weird as this sounds dehydrated tomato skins and seeds (a by product of canning- people dehydrate the skins and seeds to powder them for flavoring) everyone raves about the tomato flavor but its just bitter to me.
    I do buy watercress for my big goldfish. They absolutely love eating it. I buy bunches and float it in the tanks. Ive not thought about growing some in my hydroponics. It might save me a bit of cash lol.

      Check out CropKings grower school...Also attend as many high tunnel and greenhouse conferences that you can and make sure to talk to venders...that's where the knowledge is!! We also took classes at Ohio State they have a terrific ag school.

      Everything is good. Devon just wants to spend more time with the boys and her family. It was hard for her to video and edit in terms of time. Coming over to our farm this winter has also be more challenging with the weather and the boys getting snow days and school cancels. We all decided to take the channel in a new direction with more daily stuff going on and education content. Devon says she will jump back in hopefully we can grow the channel on new format.
