Mine is medium! I'm also 6ft... I could ride large but prefer slightly more compact too. It's long and slack already but the cockpit it perfect for me as I've set it up.
Yes, the jaws are adjustable. I got it from Lidl - they often get them in the summer biking season! It's good enough for my needs but not a proper workshop stand by any means.
No, you can only buy from Nicolai or official dealer - however there are a lot of customers from Malaysia so there must be an importer or dealer there somewhere!

how does the lightest gear to pedal when climbing compare to eagles 50t or 52t?
It's a tiny tad easier than eagle 50/32 I think, but the hardest gear is much harder!
