I was a head chef in a very ordinary kitchen , my supplier of goods got me a few shifts at Aubergine, she knew Gordon and asked kindly on my behalf and explained my reasons,it just got its first Michelin star, I just wanted too experience what it was like too work in a Michelin star Resteraunt, Marcus was his sous chef , and was an incredibly kind, mild mannered, polite person and was a real Gentleman, Gordon was also polite and well spoken , but come service Gordon changed dramatically and turned into a Tyrant , but I still remember the perfection, Lobster ravioli, sea bass with vanilla foam , prune and Arminiac soufflés, but I remember mostly Marcus , such a nice , kind , intelligent Chef , and I realised I’d never be a Michelin chef .great Pod cast too , very interesting questions and in depth .

Just a riveting conversation on every level. So many chefs are media trained to death, spinning obvious talking points to protect their brand. Marcus seemed so comfortable being his authentic self, letting it all hang out. He's embracing new ideas and opportunities with no interest in resting on his laurels. Bravo to the hosts too. Their listening skills are amazing- the reason why this interview was so engrossing. Much appreciated!

I LOVE this! I've been a Gordon Ramsay fan (and critic) for a LONG TIME! I think I've watched just about everything he's got on TV. I've BECOME a Marco Pierre White fan, gradually, knowing his relationship with Gordon Ramsay, and now the next generation, Marcus Wareing, and the HONESTY about Gordon Ramsay just sums up. A lot of people only have negative opinions of Gordon Ramsay, but I've looked at him through a different lens, that of "tough love", although I think a lot of his programs are just self-promotional. I love Marcus giving a 3rd party view.
Marcus is my favourite of all the top chefs. What a great guy. So professional in his life. I am ex military and have many issues with people i work with who don't give a shit about the job. If everyone just applied themselves with passion and care we would all have better experiences in life. Great Chefs are very much like Soldiers in their mindset and that's what makes them special.

Happy to say I was one of those 'characters' in his brothers kitchen at the Scarisbrick Hotel, some great times there with Brian HC & Richard SC. Could tell from the outset Marcus was going to be the man he is now, so driven in everything he did, pretty sure he never lost in the ring either. Well done ,'Chief ' 👏👏👏👏👏
absolutely loved this podcast, i only lasted one episode on marcus and the worst feeling was screwing up on skills test and marcus saying come on darren i know you can make a mayonnaise and cook was amazing and then his harsh criticisms of my signature dish was the best thing for my career and has helped shape me going forward as a chef !! being told your not skilled enough to do a dish is crushing but sometimes we need knocking down to reality to build ourselves to where we want to be but with realism of where your actually at!! marcus and gordon were always my idols growing up as a chef and still are now!!!

I agree with Marcus' key characteristic to success or high performance. The key is the effort that you put into to achieve your goal. I have average mental capabilities and did not have the same opportunities at school as others. But, I learned during my last two years of university that I can be top of the class when I dedicate myself completely to be the best.

Marcus Wareing has always impressed me dedicated, hard working, common sense, intelligent he is very inspirational and doesn't take any crap...he is a good influence and would be a good companion to build you up I think.
This podcast is a goldmine. I am in no way connected to the culinary world, but the applicability of Marcus's life lessons almost seems industry agnostic, which makes it even more brilliant.
Now, all I need is a High Performance episode with Gordon Ramsey:) What an episode that will be!

I grew up in the same road as Marcus Wareing and used to deliver the Southport Star for five years down the street and neighbouring road. The family Doberman scared me when it barked behind the gates but then I was scared of dogs anyway. He used to do a lot of running around the block in the late eighties while I was stood on the street corner eating chips from Papas Fritas ( legendary chip shop). I knew he was a boxer. Moving to London was brave and the rest is history. He is right about slipping through the net and education. I won't elaborate on my first hand knowledge of the system except to say UK education is broken. There are many reasons for this but leadership is a critical issue. If every school had an Alex Ferguson or similar in charge there would be a commitment to excellence woven in the fabric and the impact on life chances would be transformative. Stanley High School in Southport had a poor reputation in the 1980s. There is a culture of low expectations in many schools yet many teachers think they are the best thing since sliced bread. Obviously no link between low expectations/poor teaching and the eight million adults in Britain who are functionally illiterate.
For a guy who never worked under Marco Pierre White you can see how Marcus inherited Marco’s über chef DNA via Gordon Ramsay. Total focus and then some.

Loved this podcast. Marcus Wareing is an inspirational chef & person. He lives his life & makes sure that his experiences are a benchmark for young chefs to set their goals by. He is never afraid of hard work & has shown that you can achieve whatever you set your mind to. Just don't expect it to happen overnight! The well thought out questions helped draw out so much from Marcus and created smooth transitions that enabled him to tell his story with incredible flow & ease. Thank you.

Honesty is one sign of a good chef. Unlike Ramsay, who has lied, manipulated, and hogged the camera for decades, this chef has emerged as a true leader and elder statesman of cookery. We should all be so focused and mentally tough.
Always been intimidated by Marcus. Scared to work for him. 20 years later I’m smiling ear to ear. How he’s changed and how inspiring he is in a different manor from years back.
As i very staunch GR fan i have to sY i admire this man immensely! He is s very self aware man who loves being nice. I was very fortunate enough to have been given his latest Cook Book for my BD in October, its fab. Thank you Marcus.

Brilliant interview and brilliant man. For me the most important thing said in the entire pod was the very last comment. The detrimental impact the distraction of a smart phone and lack of focus can have. We are at a turning point in humanity in my opinion with these things. Those who can control those urges/habits will dominate and those who can't will have very little.

Timing is everything!!
Really enjoyed this. Great insight. The only thing that miffed me was one of the non-negotiables was "I am what I am, I won't chsnge" and a piece of advice to a young chef was "don't change" but minutes before that Marcus talked of having to change because it matters how people perceived him...
I get the sense that Marcus was more trying to say, don't ask someone to change - they have to recognise, as he did, when they need to change how they act within themselves. But at the root, don't change your core values - something he seems to have had ingrained from his father.
People always come up with sound bites like that. But, it never ever conveys the complexity nuance . Every soundbite is sometimes true sometimes not, and not absolutely true, the sense of these quotes is not meant to be adopted completely for every instance of life

Fantastic interview, I did not know Marcus boxed.. super.. and great insight into Marcus...well done.. also The best chef I have ever seen on Master chef Professional ( Either with Marcus or MIchel Jr..) was Craig Johnson, an unbeliveable chef, 21 at the time .His apple desert was the most amazing creation under pressure and delivered impecibally, even with the pressure of using the dry ice to solidify that boozy calvados ice cream and the presssure of that.... to the Michelin stared chefs, at the chef's table, and for Marcus to recongise this so early in that season was brilliant, shows you how marcus sees talent.. He now is a brilliant chef working for Marcus... his best diamond in the rough... by far and I have seen every season. fFr Marcus to call Craig a natural chef, not a trained chef was a true statement, but I would think inspite of Master Chef, Craig would have made it , since he was working in a gastropub 1 star michelin place... for us as viewers it was great to see his head chef believed in him and advised him to enter the competition... just brilliant..

I’ve been a chef for 43 years,seen some of the great and good and some seriously nasty chefs,in my opinion the reason a chef like Marcus has and got 2 stars was hard hard work
The reason he didn’t get 3 stars is simple.there are only a few chefs that have it,the real mustard,and he hasn’t. And he knows it

He is a super soldier of a chef trained at the top by the top but the truth is we all find out how good we are very early on

I’m trying to say this,only the very few have the magic that make us all want to copy try and be like them,Marcus is one of the very lucky people who have gotten to see first hand how the genius chefs work and for a very long time,in my opinion he was a fantastic number two
I get why he now has a life,he is what he is a very nice man a quality chef,there’s no bile from me
To me the brilliance in Marcus is akin to Marco Pierre White, a chef who’s entire being is wrapped up and embodied in their passion for cooking and skill for their craft. As opposed to Gordon (who’s just a straight bully in the kitchen there’s no two ways about it), someone like Marcus inspires those around him to achieve the same standard of excellence by simply how much he enjoys what he does. Attitude is infectious, people are much more likely to follow how you lead by example as opposed to just what you tell them to do.
lol your reference to Gordon as a bully in the kitchen, I guess you’ve not worked in professional kitchens because the nice as pie chefs you see on tv, even Marcus, I can guarantee you are absolute ball busters in the kitchen just like Gordon. I would put my house on it
Gordon Ramsay measures(not everything but probably alot) success in external validation. But hearing Marco and Marcus, they discovered that internal success triumphs external success.
What a load of nonsense, Marco was way worse than Gordon. He yelled and threw things at people, you call Gordon a bully but more people would say that about Marco

Is this a UK thing? To say "man management"? I've not heard this expression in Australia. We simply say "management" or "staff management" or "HR" or "leadership". I've heard this "man management" in, for example, Hotel Inspector. (Which I also enjoy). "Man" is already in "management'. Seems odd. I've always admired Marcus Wareing for his achievements and his great down to earth attitude. Fabulous interview, very much giving a deeper insight into the man. Doesn't seem at all affected by his success and the fame that comes with it. I'd go as far to say that his personality far outshines that of Gordon Ramsay, in as much as he's a more honest,unaffected character. He doesn't cultivate other famous "celebrity " friendships, unlike Gordon Ramsay, and seemingly flies under rhe radar a little. All his success seems driven by hard work and inevitably a degree of luck, without the immense hype that surrounds anything Gordon Ramsay does. I wish him well.
