  • Sutari mutton tapelu is a local cuisine of the Surat city of Gujarat. The ready available tapelu masala and fresh turmeric is most important ingredient.
    I took
    500gm Mutton
    300 - 500 gm onion (more is better)
    1.5 tspn Garlic paste
    1.5 tspn Ginger paste
    0.5 tspn green chili paste
    5 Cloves
    5 Blackpapers
    1 Badi ilaichi / black big cardamom
    5 Tej patta / Bay leaf
    small cinemon stick
    1 inch Fresh turmeric
    1 tspn Tapelu masala / spice
    1 tspn Garam masala
    1 tspn butter
    1 tspn kashmini chili
    1 tspn dhaniya jira / cumin coriander powder
    1 tb spn of refined oil
    Heat up oil in a vessel till fumes cone up.
    at low heat fry mutton in refined oil with whole spices (bay leaf, cinemon stick, Cloves, badi ilaichi, black paper)
    after change in colour of meat add onions (big pieces) add salt and close the lid.
    mix spices (fresh turmeric, green chili paste, Garlic paste, ginger paste, tapelu masala, garam masala, Cumin Coriander powder, butter) to make a paste.
    after mutton get cooked, make peripheral layer of paste layer over boiled meat and onions.
    Cook for 10 minutes without blanding. after 10 min open lid and blend everything.
    make dough in activated yeast to make puri as companion for Mutton tapelu.
