    People who dislike nigella confuse me. She truly is a goddess. I love her recipes and philosophy

      Emily Devereaux some people hate her because of her upper middle class background, accent and education. I like her a lot but there is a huge class divide in Britain and some people's hatred for Nigella sums it up.

    As she says, “Simple beauty”. I have watched a few of her videos. I really like her recipes. I could listen to her for hours. She is so poetic, graceful. Such class.

    Nice Middle Eastern themed cake! Yet if you swap rose water for orange flower water, you will have more strong and defined taste, especially with the pistachios on the top, and adding a bit of samolina grits to the mix, will make the cake holds well, especially with the weight of the apricot pieces.

      I agree, but semolina is not gluten free. Which is _so important_ nowadays.

      polenta does the binding here. semolina is inferior in flavour

    This was enough for me to figure it out -- AND to want to buy her new book. To keep it gluten free you cannot sub semolina (semolina is wheat) for polenta. Instead used fine corn meal which is the same thing. I didn't have Rose water. Sub fresh orange zest.

    Going to try this without eggs but with apple cider vinegar + baking soda to help it rise ☺️ also some almond milk to make up for volume x

      +Abhi Velu my first attempt no, but my second try I used aquafaba to make a fluffy egg replacement and that worked well :)

    Don't know how she keeps her figure with that very sweet tooth she has...I thought she could have cut down on the white stuff a bit..and perhaps the sugar as well !!

      Jacqueline Paul according to a recent interview she said that “in order to continue to fit through doors”, she had to either eat less or move more but said dieting would never be on the cards, so she started walking briskly up hills, doing Pilates and lady weights.

    There's no sweetness in polenta and ground almonds. She just brings some new sense in her shows. But I really like her cooking she's just amazingly beautiful n her voice n her British accent.

    Is Nigella trying to take credit for a traditional Lebanese apricot cake which is normally done with orange blossom water? A much nicer flavor than rose water btw.

    I can taste that special flavor of this delicious torte. Congratulations Nigella!
    I would be thanksful if you can give the meassures, cause I can't understand exactly what is necessary. There's no butter, well the 6 eggs would provide it. I'm expectant for your kind answer my lady!

      Brenda de Van Dillewijn The following are the quantities (for one 8-inch or 20-centimetre cake), from Nigella's website:
      150 grams dried apricots
      250 millilitres cold water
      2 cardamom pods (cracked)
      200 grams ground almonds
      50 grams fine polenta (not instant)
      1 teaspoon baking powder (gluten-free if required)
      150 grams caster sugar
      6 large eggs
      2 teaspoons lemon juice
      1 teaspoon rosewater

      Dairy free means no products coming from a cow. She didn't say it was vegan.

      Eggs are not dairy... Dairy is products made from milk like cheese, butter, yogurt, etc.

    She is so pretentious -makes it tedious to watch .
    I liked this cake recipe-except she should have used semolina instead of polenta.
    And that absurd joke about rose water-clearly she doesn’t know the difference between real and fake rose water.
