Look no further. Tovia's recipe thus far makes the perfect egg roll wrapper. I followed exactly his recipe and instructions. My wrappers turned out perfect without any flaw. His recipe turned out to be like "Melissa's eggroll wrappers" which is sold for $2.78 (15 pieces) at the stores. I used to buy them from Walmart, but cheaper to make them.
I have a Marcato 180mm pasta roller where I can achieve a 6.9 x 6.9 inches( almost 7 sq in) egg roll wrapper. I made 13 wrappers using # 5 setting as the final thickness starting with 0- 1 setting using this recipe. Word of caution, do not use the pasta drive making wrappers. It will not work because the drive is too fast and you will not be able to control it.

I used The Loopy Whisk's pasta recipe (gf flour blend & whole eggs) as the egg roll wrapper. I even managed to get the little blistery bubbles on the rolls when I fried them. My gluten-eating son who recently had egg rolls from The Mandarin buffet said they were on point.

I make the dough using my kitchenaid mixer using the hook until smooth. After a 45 minutes rest wrapped in plastic, I divide the dough in 4 portions. I use the pasta roller starting from the widest setting. I use the 3-4 setting thickness to finalize it. The width would be the width of the pasta roller which is 6" and when you cut each piece, measure the length in 7 to 8 " length. When you fold in the ingredients, take your time since you are working with a very short width.
My daughter and I love cooking and trying new recipes, we were sourcing for a spring/egg roll wrapper recipe (the price in stores are a bit crazy) and found you, yours is detailed yet simple and will become a definite go to from now on. Thnxx much

Erin Cross + you can use a tortilla press, in the first stage, & then a rolling pin in the second. Try viewing a few samosa recipe videos to see how they do it. (Just don't roll the layers of dough out as big & thin.) Then come back to this video for the recipe.

so while this COVID is limiting my shopping, the store did not have egg roll wrappers. I had everything else for egg rolls. SOOOO this recipe will work, its simple, and I get to use my pasta roller on my kitchenmaid stand mixer. (you know, that sort of expensive mixer that felt like a right of passage to own, even at my age, but hard to justify? like having a reason to use, lol) I will let you know how I do.
Those are some good looking egg rolls. I wonder if they use that machine to make the super thin tortilla chips. I have been trying to figure out how to make those, but the masa does not seem to want to go very thin without splitting.

Terry Lyle + did you ever try making these for yourself? I know this was a year ago, but I wanted to suggest that you watch a video or two for making samosa from scratch. They show you how to roll out batches of dough for "wrappers", with fairly uniform size a thickness, & how to cut it to size. Also if you can procure a tortilla press, it will help in the first stage, to uniformly press out the dough balls, to a round flatbread shape, a lot quicker & easier.
Wondering if I could make a bunch of these and freeze them in batches for when I need them. Feel like every time I’m in the mood for Chinese I’d probably rather spend the 2.50 on wrappers than go through the trouble of doing this every time. That problem of my laziness/lack of meal planning could be solved if they were freezer friendly.
Tried cutting the recipe in half, hand kneaded for almost 30 min & still can’t get the consistency you have. Something was off, had to keep adding more water to get it slightly close to yours
I can't live without egg rolls with my chinese takeout... This egg roll wrapper has been on my watch list for a year now. Kneading to build up the gluten factor is a great too:)

hi tovia! i used your egg wrapper recipe to make southwestern egg rolls. they looked all blistered and nice but the crispness did not last 5min!! my filling wasn't even wet, just chicken, veg, cheese (cooked but cooled before stuffing) how do i make it stay crispy?
@@CookingWithTovia 6min, by hand though i don't have a mixer and i stopped because the longer i kneaded it the stickier it became and it was sticking on the counter and my hands and making a mess. so i thought 6min was ok... how long does your stay crispy? 30min?
You have to knead it for about 10 minutes because you have to develop the structure of the dough. Not kneading it long enough will cause the wrapper to fall apart. If it gets to sticky, just add a little flour to your surface.
Try kneading it longer, it will. It stay crisp unless you really give it a good kneading. This is one of those doughs you want to over knead. This keeps the rolls from falling apart and not staying crisp long enough. Also, place the egg rolls on a rack to allow the air to circulate around them.

Use corn or potato starch between them and they should freeze well raw. You could use wax paper between if you cant do starches.

Can you tell me times for kneading without a processor? I have to do everything by hand.
Knead for 5-8 minutes or until the dough is nice and smooth. It really needs to be kneaded properly or the wrappers will fall apart and be very mushy.

I went from the thickest setting to the thinnest setting. My particular machine 0 -10 (wide to thin).
Just an idea instead of using a knife to make your squares after you've run your doe through a pizza roller cutter would maybe be a better choice
I used a knife because it was all I had at the time.

Allow the dough to dry a little and dust with cornstarch and layer them. Wrap them with Plastic wrap.
