    I love popovers. Besides slathering with butter and jam, one of my favorite ways to serve them is to cool them and then stuff with curried chicken salad with nuts, grapes or raisins. Terrific brunch... Impressive and so FANCY!!!

      Its easy. Animal fat will always make it more tasty. If not veg/plant based oil is fine.

      The only difference that I can see, between these and the Yorkshire puddings, I make, is with Yorkshire puddings, I heat up the muffin trays with a tiny bit of fat first, then I pour the batter (it’s the same recipe but without the butter) into the very hot muffin tray and put it back into the oven until cooked.

      Yorkshire pudding is made from beef roast drippings in a pan or go home. A muffin pan and fat is a popover.

    ❤️I used to make these once I awhile, with brunch or dinner. So good. This batter, as you pointed out, is similar to Yorkshire pudding batter, also the Dutch baby or German puff pfankuken. Jordan Pond House in Maine used to serve these. With a bit of butter or sour cream and strawberry preserves, there's little need for anything else for tea or dessert.✌️

    I had never heard of popovers before, (I am in the UK) but as others comment, they look and sound great. As a child, 60 years ago, we used to enjoy Yorkshire puds with roast dinners for sure, cooked in oil, not necessarily dripping, but also with butter and sugar or golden syrup for dessert sometimes too. I don't think we would have added butter to the batter - too decadent! Lol

I did use a popover pan and LOTS of spray because we’ve had them stick in the past but NO sticking this time! Your recipes are AMAZING!!!! I always have success when I use them! I love making popovers! I usually add cheddar and black pepper to mine, though I've found there's definitely a delicate balance between being cheesy and losing height. Going for a fine grate helps, but it's super easy to make it just not rise. (Then again, if you just want an eggy cheesy bake that works too!)

      how much less do they rise with cheese? i really want to make cheese ones.

    • @DessertGeek
      @DessertGeek 2 года назад +2

      @@mammasita3511 So after trying a bunch of cheeses it's more about balance. Too little cheese and you won't taste it but will have normal rise, too much and they're tasty eggy cheese pucks, and it all depends on the type of cheese, the amount of cheese, and how you grated the cheese. I'd start with less cheese than you want to add by like half, a sharp or medium cheddar, with a fine grate if possible, maybe a half cup total for the batch. (Grated parmesan would also work great, I just tend to do black pepper + cheddar because it's tasty. And a larger grate will work, but then I find it's better to use less cheese if you want the same height.) You could even bake half the batch, try them, and then add more cheese? Best of luck!
