Its easy. Animal fat will always make it more tasty. If not veg/plant based oil is fine.

Muffin pans have larger holes than cupcake pans which is why they have fewer holes. 😍

The only difference that I can see, between these and the Yorkshire puddings, I make, is with Yorkshire puddings, I heat up the muffin trays with a tiny bit of fat first, then I pour the batter (it’s the same recipe but without the butter) into the very hot muffin tray and put it back into the oven until cooked.

Yorkshire pudding is made from beef roast drippings in a pan or go home. A muffin pan and fat is a popover.

❤️I used to make these once I awhile, with brunch or dinner. So good. This batter, as you pointed out, is similar to Yorkshire pudding batter, also the Dutch baby or German puff pfankuken. Jordan Pond House in Maine used to serve these. With a bit of butter or sour cream and strawberry preserves, there's little need for anything else for tea or dessert.✌️

Hey! Just wanted to say thank you so much! My mom and I used your recipe tonight (the only difference being that we substituted half and half for milk simply because we didn't have any milk on hand) and they turned out so beautifully! Also we don't have a blender so we used my NutriBullet which worked brilliantly as well! (Also generously greased popovee pan with butter as we had no cooking spray) ...All your tips here made all the difference, thank you so much for this wonderful recipe, it was light, airy, egg-y, custard-y goodness!!! Your channel is helpful and delightful, Happy New Year to you!
