Adding salt to your cooked veggies is way different than eating potato chips. Adding salt to pasta water is not the same as eating fast food. You have to keep it in context and be reasonable. Like, don’t put 4 tbsp of salt on your veg, but a sprinkling is fine.

Well I’m not italian although been living here for years and years so I obviously know cacio e pepe and do like it a lot but I wouldn’t consider mac n cheese a version of cacio e pepe just because they both have some type of cheese, to me is a completely other type of pasta swimming in cheese, butter, milk and whatever and the cheese is completely different and waaaay more.
Just because there's cheese and pasta involved doesn't mean it's the same dish. Cacio e pepe is italian. Mac&cheese isn't italian because it wasn't invented in italy, maybe it's just your poor version of cacio e pepe
