I'm always down for a good man hunt, especially if there's ass (b)eating involved. Like Vigilantes vs ramp buggy.
Or for something completely new, a GTA version of an egg and spoon race. But the spoon is a tug boat, and the egg is an APC (tutorial for how to bring them together is on my channel). See who can get to the Del Perro pier first, or who can get closest without dropping the APC egg

You guys should do a combined hide n seek and manhunt with 4 seekers/ hunters trying to find and then stop 1 hider/ runner. First, start off with hide n seek, yet you can't get out of the car you're in to hide on foot. You should blend in as npc traffic in a section of the map first, same rule for the seekers. Then, after being spotted, transition into manhunt where you have to make it to 3 or 5 LS Customs your choice of how many you visit. Once inside of LS Customs, install an upgrade (If at all possible make it a random upgrade). Then, attempt to make it to an area of your choice or jump into the water somewhere like you attempted to do at the dump jump at the docs. To make it more of a challenge, all cars used should look like it's one that can be stollen from npc's or a parked car. No weapons can be used and have 1 hour time limit or a time limit that you have picked.
