I’m half way through this cake. Making it, not eating it. Yet. Just making sure my cakes are completely cool before I fill it. But the sponges are so freaking fluffy and delicious. I always get impatient and dump the flour in at the end. Not today Sally! I did what you said and wow. I’m feeling so completely competent at the moment. I’ll post a picture on Instagram when I’m done. But meantime thank you!
I baked a 3 times 11 inch version of this cake an d took it to work and I can tell you it got a very good reaction. One change I made is to do Italian style meringue instead of Swiss
