Perhaps Try a finer grind - I am down to almost a 450micron type size on single pour and go a lot hotter with light roasts almost off boil. Also try stirring with other side of chopstick the smoother head doesn’t catch on paper - nice vid 😊

Tales Coffee inspiration. Quiet quick execution, perhaps too coarse? And underextraction of that finish "wall", that may leeds too an over-acidity in the cup. Try to get a "dome" finish, that's the Tales Coffee signature 😉 super good editing btw!

So question, this is your home base coffee method. What's the difference between a coffee machine at your work and this type of method?. I'm not a coffee expert but what it changes is the flavor? or it just depends on the coffee beans? Or maybe both?. What are your thoughts.
I know this is not pressed expresso. Pour over is more mellow flavored.
I really like your videos, I'm from Ecuador and I'm a barista and I haven't tried your technique, I have a concern from your tecnique. Can you achieve a good sweetness or you have a extra acidity in the infusion? From my point of view, you are not able to develop the coffee body well, I'm going to try your technique but is a good technique greetings and continue with your videos. :)

I agree. But sometimes when I'm lazy to brew, I also did the brewing technique like she did.
It's a whole different recipe/technique....

Try the blooming process first instead of going all the way to 300ml pour. Maybe you could try Tetsu Kazuya’s brewing method too.
