Sir i have a small query:
In past processing you suggested pulp be heated to 110 degree C, then cool to 32 degree C , does after adding 2 percent salt & 0.8 citric acid, does it required to re heat to some higher temp. What is the temperature range from where the oinon paste mixture with salt and citric acid is cood to 70 degré for packing . Please clarify and guide please. thanls sir
