Only idiots think the cut off cake magically becomes inedible 🙄 helllllloooo you can still eat it, or use it for cake pops and other stuff. When I've done sculpture cakes I always keep the cut off pieces til the end in case I need to add more back on to a part of the cake, then in the end the kids and I enjoy the leftover pieces later just like the cake. In bigger bakeries it might be wasted, but don't accuse and assume without seeing it, ruining someone's tutorial without evidence is just rude.

It's a whole slab and just cut in rectangle (8" x 16") plus extra 8x10.
