You’re just amazing!!!
I learned a tip about egg white and making it frothy. Make sure your bowl is clean of all oil because the oil can break your egg whites down.
And put your metal bowl and attachments in the fridge, before using, the egg will beat faster.
For tip # 3 , simply and carefully crack egg and scoop yolk out with gentle hands or like my Gramita did, always removed yolk before the whites hit the bowl. It was magical 🥹💓 I love Chile rellenos.

I make the best chile rellenos ever ive been told and i dont use room temperature eggs or use flour in my chiles. I also cute out the stem by making a perfect hole up top, you just pull it out and everything comes with it. U add your cheese through there and you never have to use toothpicks or worry about the chile breaking.
Same!! Even my husband’s coworkers have tasted my Chile rellenos and always ask him if I’m willing to sell them 😂 but anyways, I cut the stem and discard the seeds before “charring” them, it’s so much easier to peel them too

Back in my days my mom used to use a fork. But, hand mixer is faster, specially when one works, and there is no time.
My mom would do the same thing with the fork. Nowadays we are spoiled with making it easier con los aparetes que tenemos. Lol

Try with corn starch/ instead of flour and 1 T per 2 yolks...puffier.I also like to slit chilli before especially if skinny stays duro!
