My favorite way to enjoy "meat"loaf is reheated in the airfryer and cut into cubes... it crisps up almost like croutons. Then, I serve over salad. SO yummy!

Lies My Teacher Told Me is a great book for educating yourself on the subject of racism, ethnocentrism, and general history of people of color. It’s a comprehensive critique of history books in the US and it really brings to light how whitewashed our education system is. It’s also just really informative when it comes to all of the history that has been hidden from us. I highly recommend it. Side note: I’m so excited to try those little meatloafs and I think it’s awesome that you’re using your platform to share resources for education on systemic oppression and racism. Keep up all the amazing work!

Yep! Any plant milk work work. I prefer to use soy because it’s higher in protein and works well for recipes that don’t have eggs in them but honestly, use what you have ☺️💚 enjoy!

Hey Jenny, jackfruit doesn't have to be spicy because the fruit itself isn't spicy. Just drain and rinse it well in a colander, then shake it to remove the excess water, and use it to make recipes like my BBQ Jackfruit ruclips.net/video/Gf6kE67Mpzs/видео.html It's delicious! Just use a not-spicy bbq sauce and you'll be good to go! Hope you enjoy ❤️
Doesn't look like enough food for one day to me. One small baked donut for breakfast with miscalleneus pieces of fruit , a salad for lunch that has no complex carbs or enough fats, then vegetable meatloaf.. This can't be good in the long run.
She doesnt eat like that every single day, sometimes she eats more sometimes less,depending on how hungry she is, i think she is a pretty good role model when it comes to listening to your appetite and not restricting anything.

Hi, thanks for letting me know! That post is formatted incorrectly as my blog is under construction at the moment but here's the recipe: 1 1/4 cup unsweetened soy milk, room temp 2 large lemons 2 cups all purpose flour 1 cup sugar 2 teaspoons baking powder 1/2 tsp kosher salt 1/4 cup unsweetened applesauce 1/3 cup melted coconut oil (refined not virgin, otherwise it will impart coconut flavor) 1 teaspoon pure vanilla extract 1 tsp almond extract 2 tbsp lemon zest 1/2 cup blueberries Preheat your oven to 350 degrees and grease a 12 count donut pan generously with refined coconut oil or cooking spray. Wash, dry, and zest two lemons. Set the zest aside, then juice the lemons into a small bowl and set aside. In a mixing bowl, combine soy milk and 2 tsp of the lemon juice. Mix and set aside. In a larger mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well and set aside. Return to the soy milk mixture, which should have curdled slightly from the lemon juice, and add in the melted coconut oil, vanilla extract, almond extract, applesauce, and 2 tbsp of lemon juice. Whisk to combine. Add the wet ingredients to the dry ingredients and whisk to combine. Mix until well combined, but be careful not to over mix. Pour the batter into the donut pan, filling 2/3 of the way full. Then add a few blueberries on top of each of donuts and press down slightly. Bake for 25 minutes or until lightly golden and pulling away from the pan slightly. You'll know they're done if they spring back when you press the tops. Allow to cool for 3-5 minutes in the pan, then bang the pan on the counter a few times to loosen the donuts before inverting onto a cooling rack. Allow the donuts to cool completely before icing.
