      What about Korasan wheat? I think its called kamut flour. Also any suggestions on a flour mill thats affordable. I have my eye on a country living hand grain mill, but its just so expensive.

    I have been baking bread in a Dutch oven for years. I put the dough on the parchment and then gently lower into the pan, it is much easier than trying to center the parchment paper and dough separately. Also, if you sprinkle cornmeal on the parchment paper, the crust is not as dark and you get the great chew from the bottom crust. I also add an ice cube between the edge of the pot and paper for additional steam. Happy Baking!

    My grandpa has a stone mill powered by a waterfall that he built in 1947 and still works in 2020. Fresh flour always smelled good. I just finished renovating it!

    When I lived in Eugene Oregon I would dress my garden beds with the old straw from my chicken coop in the Fall. Since I feed my chickens with a corn/wheat mix I got a crop of winter wheat every year to harvest in early Spring. I highly recommend planting it as you mulch your garden beds. (I grew potatoes in my leaf piles too).

    Flip the dough onto the parchment paper and score THEN lift it, using edges of paper, into the Dutch oven. Much safer.

    We eat so much bread and I have to buy yeast so often!! When we have COVID and our country go into lock down..lots of things run out from supper market...so I have to make my own yeast..sourdough starter...I m glad I did because I love sourdough bread..If any one didn't have sourdough start..I should make it guys..easy and it's worth it!!

    I’m watching. Washing dishes. And I see you measuring on the digital scale. Then scraping with the dough scraper, then putting it in the proofing basket...and I’m like “wait!” , is this the same bread I made today???? It’s close! I prepped no-knead einkorn artisan bread last night from the Jovial cookbook. Baked it today. I used parchment too. But I don’t have a proofing basket. I will get one soon tho. My kids will eat it all for breakfast I’m sure. Great minds!!!!!

    You can also grind sorghum grain and add it to the whole grain. It has a nice slightly sweet flavor. Love it. I haven’t tried the sorghum syrup in bread. Maybe I’ll switch out the honey in my recipe sometime and see how it tastes. Thanks for this recipe. It looks delicious.

    That looks so good! I love to try to bake "fancy" and sometimes splurge on expensive ingredients, but this one is WAY out of my baking level - I'm lacking ALL of the equipment. 😫

      The only purchase that would be a must, as I see it, is a heavy pot to go into the oven with a lid. Everything else just use what you have. Shaye explains so well, improvise with what you have on hand. I have yet to get a grain mill, so I'm using store bought milled flour. The old adage "make do with what we have. "

      @@justpatty7328 true! She's very good at explaining and I am so inspired by how she talked about the grains. It sounds like the same science as coffee beans! But that marble slab sounded pretty important too, for taking the extra moisture out of the dough. I always get my dough too sticky and end up having to add more flour, which changes the ratios. I'm sure I could make it, but it wouldn't be as good as it could be.

      @@thegrowinggardener I follow someone on Instagram that always makes perfect sourdough bread and she used her wooden slab counter tops, so no I don’t think you need a marble slab exactly

      The marble slab, just like the grain mill, are extravagant extras. They can go on your Christmas wish list. I have neither and I'm making quite good einkorn loaves now. Took a good 6 weeks and watching several videos to learn. And practice! The dutch oven is a must and so are the scrapers. I found the most challenging thing is to determine when the starter/levain are sufficiently active and when the dough has risen enough during proofing. Once I figured that out (via Carla Bartolucci videos), the results are worth the learning curve.. and I've never baked bread before!!

    Yum! My 150 year old farmhouse was too darn cold in the winter to do a sourdough starter successfully. I need to give it another try.

    Just came across your video and love it. I love making bread for my family.
    My grandmother and aunt would put sorghum in there bread and totally forgot about that until I watched your video. My one thing I have been missing. They are no longer with us so I can't ask them which sorghum they used. So many different brands and options, would you mind telling me which one you used?
