    Mango float is basically mangoes, cream, and graham. You can probably substitute mangoes with other fruits such as peaches or berries if you can't get mangoes. Frozen mangoes are ok but the texture might be different.

      I combine peaches and mangoes. They complement each other. If you use frozen mangoes, try to blend them with peaches and spread them over a layer of graham crackers. Top with cream, arrange another layer of graham crackers, then the blended mangoes and peaches. Spread crushed grahams and decorate with thinly sliced peaches. Enjoy your peach-mango float.

      You can find mangoes in Japan, but they are very expensive.

      Philippine mangoes are recommended too and is in Japan, just like in the other comment it is expensive there.

    It's ok to use frozen mangoes! Mango float isn't actually a traditional or cultural Filipino food, it's actually a food trend in the Philippines. 😁

    Menudo is one of the staples of the Filipino Feast. You can cube the liver as well, but seeing you used pork liver, it will become gamey. An alternative is using chicken liver which is creamier. Also, you can substitute the meat for ground pork shoulder or ham. It works pretty well, too.

    My grandmother marinate the pork and liver with pineapple juice first, seasoned with salt and pepper.
    It will taste great 😍 twice, she also put green pease

    I always use fresh tomatoes as well when it's a tomato-based dish, but only if they're available. You can crush the black peppercorns by wrapping them in a little plastic and crushing them using any blunt objects. I thought your wife might be sensitive towards liver, turns out she likes it raw--I'm surprised! :D

    This looks good Hiro-san!
    Tip: If you don't have raisins, just put sugar because the raisins gives a sweetness and a little bit of tangy flavor to the menudo so it's a perfect substitution and also instead of oyster sauce, use worcestershire sauce for more flavor.

    Frozen mangoes will dissolve into a puree. But you can still use it as mango float. I know that we are exporting cryogenic mangoes to Japan but I am not sure if it is still available. If you find mangoes that were frozen by liquid nitrogen then that works better.

    Frozen mangoes are okay by my book, but its still best to use fresh fruits that are available to you.
    If you have fresh peaches or strawberries available, they'll work just as well!

      Dude have you not seen the prices of fruits in Japan? MANGOES THERE IS HELLA EXPENSIVE. 50-100$ EACH / 26k Pesos lmao! While here in the Philippines you can get one for free from one of your neighbors.

    Hiro you can just put the peppercorns inside a plastic then pound them with something heavy, that's easier than using a knife. Your menudo looks good although we slice the pork almost the same size as the vegetables so that we don't have to simmer it for a long time for it to be tender.

    about your mango float i think frozen are fine since you going to refrigerate your mango float when you done anyway. just dont use the dried ones. canned mango slices can work i think. feel a bit sad mango is expensive in japan, its so cheap here. i wish we could share our Philippine mango with you guys and both enjoy it.

    Some use Reno Liver spread as a substitute to the real one the Menudo gets a thicker and rich in texture. As for meat we cut into smaller chunky sizes and it is easier to eat.

    Yes, use peaches or strawberries work well too. I suggest you use peaches to substitute mangoes for tye mango float. A layer of graham crackers or biscoff biscuits. Then mix with whipped cream and condensed milk. Then add a layer of peaches or strawberries. Repeat the layers asecond time. Top the last remaining graham crackers of biscuits, tgen the whipped cream and comdensed milk mixture in a baking dish. Freeze the peach or strawberry float for 6 hours until the cream and condensed milk mixture is firm.

    Raisins in menudo is optional so not putting them in is fine. My mother also uses fresh tomatoes aside from the tomato sauce. I'm not a fan of liver so sometimes I prefer using just a bit of liver spread instead of actual liver so that it gets mixed in with the sauce and I don't taste it as much. Adding oyster sauce is a good idea since it helps make the dish just a bit sweet.
    For the mango float, it's okay to use frozen mangoes but fresh is always best. You can substitute with peaches if that's something that's more available to you.

    If you make mango float. The mangoes from the Philippines is the best. Somehow, the mangoes from other countries have different taste.

    the cuts of liver are a lot bigger than what im used to in menudo 😅 i usually see them in very small pieces (like the size of half a finger?) but i think the flavors should all still be good. I dont like adding raisins to menudo, but i do like adding green peas! it's good for the texture
    For mango float, i have never tried frozen mangoes so i dont know if the texture will be different. I recommend you use fruits that are in season for your area that are similar, like peaches! Sweet and sour fruits with a soft flesh like strawberries could also work (but i have never tried it)

    Knorr beef cubes is full of flavor I'd only use half of it, to not make the dish salty. I might try the liver soaked in milk.

    Wow, menudo and lumpiang shanghai are my favorite celebration or event food, like for birthdays, christmas, new year and many more. For mango float, yes you can use frozen mango or canned peaches. Or any seasoned fruits or canned fruit salad whichever is available. Basically it's just layered of graham biscuits, combination of condensed milk and all purpose cream and fruits. Nice job Hiro, you're very organized and a good cook.

    One trick that my grandma uses is to thicken the sauce with mashed potato. You get some potato that you would add to the menudo and mash it right in the pot.

    I think the raisins was really a debatable ingredient on menudo like pineapple on a pizza 😁, some hate it and love it. Other recipe's also call for half ripe Saba bananas.

    oh.. nice take on the menudo... usually we marinate the pork and the liver with soysauce and calamansi overnight... and use the sauce we use to marinate for the menudo sauce after we saute the pork liver carrot and potato then add the tomato sauce cheese once reduce we add the bell pepper until cooked then salt, pepper and sugar to taste...

    If you don't have a pepper mill, you can use the bottom of a clean pan to crush the peppercorns. 🙂

    I'm only seeing what's on my screen. but I can already smell the menudo. A little oyster sauce is fine: you have an instinct for this, so you should trust your instinct. Liver + milk and raw liver + beer are new things for me. Thank you, again, for letting me see my culture's dishes through new eyes. :)

    Not sure about frozen mangoes for mango float, but its worth a try! Although Philippine Mangoes taste different from normal ones.

      @@HiroFoodinJapan you need to use Philippine mangoes. Because ours is different from other parts of the world. Its sweeter when ripe than other mangoes so it is good as a dessert.

    If you can't find liver spread you could also just use chicken liver. I've never tried it but I know it's a common substitute.

    Mango float is a frozen dessert so frozen mango is fine, better yet just use canned fruit cocktail which I prefer personally.

    You can re-hydrate dried mangoes. Soak them in water until they expand a little. For best result, make a simple sugar syrup, turn heat low then add the re-hydrated mangoes. This should give you something similar to preserved canned peaches. Let it cool then make your mango float. Since the mangoes and syrup may be super sweet, use less condensed milk and more cream. Have fun!

    i love menudo. much better if you use chicken liver and add some raisins to make it a little sweet. you can also make giniling( menudo but minced pork) then make it a filling for empanada. 😋

    Always marinade your meat in soy sauce and ground black pepper. You can also marinade the liver in soy sauce or oyster sauce and black pepper.

    We sear the meat first. For fresh tomatoes, I think this is more traditional because canned food is fairly a modern invention. Back when people were using all natural ingredients, they would have used fresh tomatoes.

    You just made a lot of Filipinos hungry! Now I have to look for a snack at least.
    Yes we do use dried ripe mangoes or canned mangoes especially when it is off season.
    There are also regions that don't have much mangoes also but they have their own fruits they have in abundance.

    Alternative is to use chicken liver. You can also use chicken liver as a replacement to liver spread. Cut it small pieces and it will disolved in the sauce.

    Frozen Mangoes are okay since you're going to freeze them anyway.
    Please do other variants of fruits that are freshly available in Japan like Strawberry or Peaches.

    For desserts, try making halo-halo, mais con yelo, or gulaman. You can also try making sinukmani/biko (sweet sticky rice dessert). Or try making ube (beni imo) desserts like cake or cookies or even ube pan de sal. :)

    Instead of using tomato sauce which has higher water content, use tomato paste. This will make your dish have thicker sauce and more flavorful.
    Using fresh tomatoes and tomato paste are the best choice in cooking tomato-based dishes like menudo.

    for graham floats, u can use different sweet fruits available, we used mangoes here because its very common fruit ang almost all the houses here had mango. or just use mix fruits in can i saw it before when you go on asian store

    I always pan sear my pork first when i make menudo so it gives more flavor then put them back after the tomatoes.

    I use oyster sauce too. It gives menudo more umami and balances the tomato and soy sauce.

    I have a confession to make.. I am Filipino but I use your videos for recipes instead of our local ones. Not sure why but yours are easier to follow and shorter/straightforward. Because of the presentation maybe? And it helps that you seem well researched and I don't need to scour all videos and articles just to decide which to follow.
    Even your Japanese food recipes are great.. but I still feel the need to buy Mirin here first.

    Nicely done on the Menudo! Here's the only tip and the most important for making Mango float. Find the sweetest Mango you can get your hands on! The mango will make or break your Mango float. Goodluck!

    You can use peaches for the mango float. The fruit toppings could vary, it just that mango can be easily bought here in the Philippines. I tried to use canned peach before and it's delicious as well! It think a soft, sweet and little bit sour fruit could go well in a mango float. 😊

      @@HiroFoodinJapan Please dont use Knorr cubes or magic or any other artificial flavoring Filipinos dont actually use those only a few. Use broth instead. Otherwise you wont taste the vegetables, sauce and the meat come together because the Knorr cubes will be too overpowering.

    i mixed mangoes and peaches. soo good. Use fresh ripe mangoes or the one in can if there;s available.

    1:15 Why not use a parchment paper? Fold it twice to make a pocket, place the black pepper inside, then crush it with anything heavy? The parchment will catch everything.

    wow menudo that looks legit :) raisin are not important actually some people dont like it in their menudo but the liver spread will add flavor to the sauce but atleast you put actual liver. and those vegetables looks so fresh. Nice going hiro sama you cooked better filipino food than other filipino i know. :)

    Hi hiro! you can use peaches or any fruits available there tho its not mango float anymore since your not using mangoes. ☺️ we call it refrigerated/refrigerator cake. we sometimes use canned mix fruit for mango substitution. i sometimes add grated cheese to balance the taste😋

    Milk is the "posh" ☺way to remove the "lansa"=Filipino term for fishy or gamey taste or smell. What we do in our household we just wash it with water first then soak in vinegar for abt a min then wash again with water.
    Afritada,Menudo,Caldereta,Potchero,Metchado they're all similar but different 😅 They're relatives hehehe. You can google venn diagram of menudo afritada...
    Basically for menudo the cuts are usually smaller. Diced for veggies and for the meat julienne cut? If julienne is applicable to meats 😅 but you'll get what i mean.. just bite size strips of pork belly and the liver.
    Im not a fan of liver but i depends on how its cooked sometimes i can eat it. In menudo yes i can eat it coz usually its diced. And if its cut thinthy like what you did then marinated in soysauce,garlic and calamasi with pepper and then chacoal grilled.🤤yum! Sometimes if there's liver in pancit i just set it aside 😝
    But raw liver??? Wow thats another level! I

    I have my own version of Menudo. If I already sautéed it with tomatoes then I will not add the canned tomatoes or tomato sauce anymore. For me, I prefer the natural taste of tomatoes. But I will let it simmer for a long time until the sauce thickens.
    Hopefully, you can cook Lechon Belly but it’s a bit tough to find lemongrass there.

    Since floats can be frozen (usually refrigerated if consuming all), I guess you can use frozen mangoes as long as it's the same variety as the one in the Philippines (or similar taste).

    Another great video! It looks so delicious!
    Our family cuts the pork smaller. Maybe half inch? We cut the liver the same size, too. Then we use tons of tomatoes And tomato paste. Then we add liver spread too. In ours, however, we don't add any hotdos or sausages.
    This made me hungry. I will ask my mom if we could have menudo for dinner tonight 😂😂🥺

    I don't think it's a problem if you use frozen mangoes.. You'll freeze it again anyways after making the float.. lol Just take note that the float is a frozen/chilled sweet dessert, so take that into consideration.. Also, you can substitute mangoes for other sweet fruits if you want to experiment a bit..

    Mr. Hiro, Menudo is commonly compared with Caldereta and Afritada since they almost have the same type of ingredients., I hope you try to cook Afritada soon which uses pine apple juice. Also Giniling which uses ground meat rather than meat chunks, mechado is a version with soy sauce, while Puchero have variety of veggies on it.

    Make the pork and liver cuts smaller so they easily fit in a spoon with the rice that thsi is meant to be eaten with
    Great idea with the liver, using milk to de-intensify the odor
    Liver spread is a key ingredient so next time you make it again, try it with the liver spread since it will change the taste and not just the thickness of the sauce

    I would like to recommend two of the filipino desserts that you can try to cook. These are "Biko" and "Maja Blanca".
    The ingredients are very easy and available. The "biko" is just simply sweetened glutinous rice, while the "maja blanca" is coconut corn pudding.
    I recommend Panlasang Pinoy's channel for the recipe.

    This was what we ate in lunch earlier! What a coincidence! We'll eat it again for dinner tonight =)
    My dad marinated the liver in soy sauce. I'll try the milk next time I'll cook pork liver.
    I use canned peaches if fresh mangoes are not available.

    U can use preserved peaches too actually as a substitute if mango is not a viable choice.
    The result is also good👍
    U can try other fruits too..being resourceful is the Filipino way in cooking. We do tantya(tan-cha)* with the ingredients and measurements. It's up to your taste and what is available 😉
    *There's no exact measurements. Same as eyeballing it..😅

    Mr Hiro, you should have chopped the liver into small pieces. Also, I like putting green peas when I cook menudo. Moreover, the menudo was good, thanks for sharing your expertise. 👍
