I use olive oil, vinegar (apple cider is what I used last time, and it was fine); Italian herb blend (dry), salt, pepper, garlic powder, and lots of grated parmesan as my dressing for this kind of salad. Last time I also added some fresh rosemary leaves since I had it on hand. Just mix the oil and vinegar first (whisk) to get an emulsion, then add the herbs, spices, salt, cheese. I also add a bit of sweet red onion, blanched broccoli crowns (bite-sized pieces), and I roast the bell peppers a little under the broiler to bring out the flavor. One thing she didn't do that I always do for pasta salad is to rinse the pasta after draining it. For most pasta dishes you want to keep the starch on the pasta so that sauces stick better to the noodles--but I've had pasta salads congeal into a big clump of pasta because of all the starch released when boiling. Rinsing most of the starch away helps keep it from sticking/clumping together.
