Little hint for making the the Vegemite easier to work with. Freeze it first and then grate it with a box grater. That's how I add butter to my biscuit dough.

We make these smash burgers once a week on Sundays. It's become a family tradition. We call them Guga-burgers. Kids never let me forget Guga-Burger day.

And for good reason. Guga is absolutely right about the cheese. I tried making them with different cheeses and American Cheese just always comes out on top.
MSG is a lot like salt, it definitely brings out other flavors, but on its own, it doesn’t add a lot of complexity of flavor. The umami powder instead isn’t _just_ MSG, it’s full of all sorts of other extras that add a complexity of flavor rather than just umami alone. Just remember: salt and MSG can only do so much for a food, you gotta have other flavors there also!

Admittedly they aren’t dry at all, but I’m so interested in trying this 80/20 blend + Umami & just cooking it directly on the griddle this way. How long do you usually leave your burgers for? I can attest to the umami powder working well with a burger. I also added Montreal steak seasoning and cayenne pepper for one of the best burgers I've ever eaten.
Keep the Montreal light as it can easily overpower the beef. As for the cayenne, that depends on how spicy you want it but I don't personally advise more than - say - a quarter of a teaspoon or so. Again, the goal is to not overpower the beef's flavor.@@NoCapJustFaxts

Been watching since basically the beginning. Always was amazed of how the the channel became more professional in terms of camera work and editing over the years. Unfortunately I think the new quick cuts during the taste testing take away from the overall experience. Always good to try new things I guess. I know the younger viewers are all about the fast edits.
Honestly I’ve been a big fan of this channel for a few years now and it’s helped me make plenty of steaks and honestly I prefer the New York strip and I’d like to see you make burgers from New York strips of all levels like wagyu or prime or something

They're the same thing. MSG is the molecule that is responsible for the umami taste. The Umami powder he used is just roasted mushrooms, which naturally contains MSG (on top of it's own flavors). Adding extra MSG to the powder won't have any additional effect.

You can dissolve the vegemite or heat it up so it's more pliable and easier to incorporate through the mince. I'm an Australian and I use Vegemite in some of my cooking involving beef and it can turn into a liquid quite easily.
Vegemite IN a burger is just nuts, that stuff is so strong. Also might want to salt the burgers since the interaction between salt and umami, especially the msg version, boosts the flavour enhancement.
Not actually that crazy A lot of prepackaged flavorings for ground beef like taco spice have yeast extract in them Really don't overdo it, but I've been cooking beef with yeast extract for years, a lil bit makes it amazing (tho I trust Guga that the other choices are even better)

I'd recommend using a better American cheese like from Boar's Head or even Kraft "Deli Deluxe" slices, over the Kraft Singles. Still has that great melt, with a higher ratio of actual cheese.

I always get 10% of the weight of the beef in raw mushroom, blitz it in a blander and mix it in so you get the umami but also the juices coming out as the burger cooks
Here in Sweden the burger chain MAX has been serving the umami burger for 4 years now , it rapidly became my favorite, served with pickled red onions ,truffle sauce and bacon. Worth trying for all tourists visiting the country. 😉

You can dissolve the vegemite in a small amount of hot water to make it into an easier sauce to work with. Great addition to stews like that too!

Guga try dry ageing steak in mustard or honey mustard, if possible, I have honey mustard with my steak and on my burgers and it is AMAZING!

You can melt/mix VEGEMITE with water or butter. Making it much easier to spread evenly.

I'd recommend using a better American cheese like from Boar's Head or even Kraft "Deli Deluxe" slices, over the Kraft Singles. Still has that great melt, with a higher ratio of actual cheese.
Not the same kind of cream content as regular kraft American singles.

The whole vegemite thing works for pasta too but i typically thin it out with bit of water if required.
instead of marmite/vegemite u gotta try "vitam-r"
its the german version of those and its much better
and no im not biased cuz im german and grew up with it - didnt know it until just recently when i tested several yeast extracts and vitam-r simply was the best

I always get 10% of the weight of the beef in raw mushroom, blitz it in a blander and mix it in so you get the umami but also the juices coming out as the burger cooks
Here in Sweden the burger chain MAX has been serving the umami burger for 4 years now , it rapidly became my favorite, served with pickled red onions ,truffle sauce and bacon.
Worth trying for all tourists visiting the country.
