  • 粿汁是一道非常香浓的潮州汤面。汤底是香料,黑酱油,加上猪肠,花肉, 粉肠熬出来的。汤汁通常也会用来卤蛋和卤豆腐一起吃。粿汁平时用的面是比粿条宽一点的但是你可以选用你喜欢的面条来配这香浓的汤底。这道汤面在北马地带,柔佛和砂捞越地区非常受欢迎。大家不妨试试!
    Kueh Chap is a Teochew noodle soup that is made from aromatic spices, dark soy sauce and a variety of pork offals such as intestines and skin, braised egg and also braised tofu. Usually the noodles used is a broader rice sheet but you can have this rich, tasty soup with any noodle preferences. This dish is highly popular in northern Malaysia, Johor and also Sarawak.     材料ingredients (3-4pax)
    1kg猪大肠1kg Large pig intestines
    300-500g 粉肠300-500g Chitterlings
    500g 花肉500g pork belly
    2片猪皮2 Pork skin slice
    3块豆腐 3 tofu
    4粒鸡蛋4 boiled eggs
    1包粿条 1 pack of kuey teow
    青葱葱油点缀 Garnish with spring onion and shallot oil
    * 粿条放进沸水里烫一烫然后捞进碗里,粿汁汤淋上去就可以了。
    *Blanch the kuey teow noodles in boiling water for a while and scoop it up in a bowl, after that pour in the kueh chap soup.
    汤底香料Soup spices
    5片姜片5 ginger slices
    5片南姜片5 galangal slices
    7-8粒蒜头7-8 garlic cloves
    2-3粒小葱头2-3 shallots
    1茶匙胡椒粒1 tsp peppercorns
    1茶匙花椒粒 1 tsp sichuan peppercorn
    2片桂皮2 cinnamon sticks
    2粒丁香2 cloves
    3粒八角3 star anise
    3片当归 3 Angelica roots slices
    15-20粒冰糖15-20 rock sugar
    1小碗酱油1 small bowl of soy sauce
    5汤匙黑酱油 5tbsp dark soy sauce
    绍兴酒提味 Cooking wine to enhance the taste
