Probably to make the blue shell seem like the better item.

Fun fact: Mario Kart 64 originally wasn't going to have a 4 multiplayer mode, but the devs were convinced to make one! Also, they had to cut back a lot of stuff in the tracks with multiplayer mode, which is why a lot of the stuff you see in singleplayer racing is restricted or otherwise absent in the multiplayer races, like the snow in the wintery tracks, or the train being shortened in the desert track.
I love how Brent being so good at these types of games makes it so that Nick, Sophist, and Vernias look terrible by comparison even when the arent playing bad at all.

For those who have not played MK64 and wonder about some comments. [Red shell goes 180 to hit thrower] Red shells do not stick to track except if you are 6th, 7th 8th. Any ther place they go the straight closer route to next place. Next place was so far ahead in another part the red shell made that turn seeking the player [Thrower reaches and impacts own green shell] Rikochets not only affect direction but also spped in green shells, player threw the green one in a tight wall spot and the shell lost speed before going it's own way [No Invulnerability] When something sends you fliying the Kart bounces two times, so the thrid time you touch ground you are in neutral position. A Kart that was sent flying in invulnerable to other items that would send it flying (Fake Block, Shells, Star just moves them but not make them fly) until they are back in neutral position. However being pushed by a heavier kart with the enough speed changes the boucinng animation to a spinning animation and counts for a second hit. Likewise, if you are spinning you can't be affected by any other spinning hit but can be hit by an item that sends you flying

Peach's Castle in Royal Raceway isn't an easter egg so much as it's a necessary environment so they can do the award ceremony in GP mode. It would be too resource intensive to create a brand-new environment just for a minute-long cutscene, so they instead load up a map they already made, plop the necessary actors there, and have the cutscene play out. A lot of cutscenes in N64 games are like that. For example, in Ocarina of Time, for the cutscene that plays in Kakariko Village after clearing the Fire Temple, the game loads Link in Kakariko as though he entered the normal way in gameplay, hides him off-camera, and then commands the game to play the cutscene.
