How to tell if your broccoli has bolted and become bitter tasting

How to tell if broccoli plants have bolted from high heat temperature in the spring and become bitter tasting. A ruined harvest is always frustrating and sad.
I'm not sure if there's a way to prevent this from happening aside from shading your plants. Maybe that would work.
