The timer in the bonus stages of Returns do indeed stop once all the items are collected in the bonus stage. There are no swimming levels in Returns, it is so far the only game in the DKC series that doesn't have swimming levels.
Honey is an amorphous (not sure if I spelled it right) substance kind of like glass and it doesn't have a melting or boiling point so I think it doesn't belong in any of the normal states of matter. Ps. fun fact there is a 5th state of matter in addition to solid, liquid, gas and plasma. It however only appears in insanely hot temperatures (something like 10^20K) and I don't remember if it even had a name.

But glass can melt...just at extremely high tempaturs it was done on one of the myth busters episodes with thermite
