when we moved from Tennessee to Kentucky and I made a new starter....I was surprised how much different the wild yeast tasted!.....the TN one was good but my KY starter tastes just like yeast you buy at the grocer.....it was a nice surprise!
I just discovered your channel and your videos are a joy and you are a gem! I've been cooking all my life but had a fear of flour and started making pizzas a year ago with some really great success. I have yet to do a Sourdough most of the time I do a New York style or a New England Greek pan pizza or a Cape Cod bar pizza. I do have a question Believe it or not, with the water in your starter you're actually at 77% hydration. Once I get above 65 or in that range it is one sticky gooey mess using bread flour. How do you manage to get it to resemble dough? I should mention I use a KitchenAid stand mixer. Really hoping for some luck on my starter as per your other video cuz I just threw away a bunch of flour on a failed first starter attempt. Wish me luck! Keep up the Great work, cheers!

Hi! You're welcome, and thanks for your questions! 😊 1. **Defrosting Dough**: When you're ready to use the dough, transfer it from the freezer to the refrigerator and let it thaw overnight. Once thawed, allow it to come to room temperature and rise for about 2-3 hours before using it. 2. **Deflated Dough**: If your risen dough has been in the fridge too long and has deflated, you can try adding a small amount of fresh starter or yeast. Knead it in and let the dough rest and rise again until it’s doubled in size. Have you had any other challenges with making dough? 🍞
